Extreme Chocolate Cake

Wow this was great! After sitting out for a bit the cake seems to have dried out and I wonder if adding a dry pudding mix and some sour cream to the blend somehow will help. But really, as it is, it's pretty great. The frosting is PERFECT consistency. I always have a hard time making buttercreams and this was one was like store quality...but tastes MUCH better! I can't wait to share it with the family.

Great! I had to modify based on what I had, added the Worchester like someone mentioned to the sauce. We ate it up! I didn't brown first, just plopped them in the pan and covered with sauce. Will def make again!

Pumpkin Chocolate Chip Cookies III

Soooo addicting! I make these every year for an event at school and I have requests. Sub out applesauce for the oil and add pumpkin pie spice, 1 cup of choco chips (Ghiradelli are the best, you will never go back to Hershey, secret ingredient, shhh!) and the rest as written. Seriously a favorite.

Turkey and Quinoa Meatloaf

I actually would do 4.5 stars. I used finely chopped green pepper and garlic for inside because it's what I had. Otherwise I followed everything but added an extra egg from some of the comments I read thinking it would help hold it together. Eh, it didn't. It was pretty crumbly. I did it on the baking sheet like described and it seemed plenty moist when I put it in. I think perhaps the baking time was too long and I should have checked it at 40 minutes. The kids were not fans but for hubby and I - we'd make it again. I like adding the quinoa for extra nutrition.

Italian Beef Sandwiches

Ok well I didn't have the time (didn't plan ahead) so I took the meat frozen and stuck it in the crock pot with the water and seasonings (used garlic powder in place of fresh, in a hurry!) and let it go for a good 4-5 hours. Sliced it as thin as possible and stuck it back in the juices for a bit. It was absolutely incredible! A bit on the salty side but will def make this again. I can only imagine if this short cut method was sooo good that this original recipe is even better! Will plan ahead next time and do it the "right way". :) (PS I too am from chicago and this def hit the spot!!!)

Extra Easy Hummus

I always hate when recipes are rated and then the comments list all the changes that were done so really it's no longer the original recipe...and yet...that's what I'm doing. Oops. Used 1 tsp cumin, 1 Tbs sesame oil instead of olive and my garlic clove was huge and totally overpowering, next time I will def use less garlic. I also added the juice of half a lime (most recipes call for lemon but I don't have any). I would totally make this again and my guess is that original recipe rocks as well!

Bacon and Potato Soup

Oh my goodness....we just finished this off. I didn't have cayenne pepper so just used black. I also added 1/2 cup of rice milk (dairy allergy). The cheese was mixed into each bowl individually. It was difficult to eat because of the cheese, however but the taste was AMAZING!!!!!!! I look like a pro with this recipe, thank you!

Braised Pork Chops

Only 4 stars ONLY because I felt it REALLY needed salt...though I know the intention originally was salt-free. But this was SOOOO easy and turned out delicious! Great comfort food meal. We served it with roasted brussel sprouts and Garlic Cheese Bisquits from this site. :)

Chocolate Chip Banana Muffins

Yummy! I too replaced the yogurt with milk and they turned out great! I had frozen bananas and just drained off some liquid when they defrosted and it was not a problem. Kids loved them!

Chicken Tortilla Soup II

Ok I didn't have cilantro, I know, bad bad bad. But even without it, this was sooooo yummy! We all loved it. And I agree you don't need that much oil. I used olive oil and just enough to cover the bottom of the pan. I cooked up fresh tortilla strips to top it with at the end and also added a small can of drained black beans and some leftover rice I had here. It was a FULL meal and I will def make again!!!!

Dad's Cookies

Ok well they didn't rise like the pic I see but I made a few changes so that could be why. Ran out of oatmeal and only had 1/2 cup so replaced the rest with buckwheat flour (what I had on hand). Subbed the white sugar with 1/3 cup of honey. Used shredded instead of flaked coconut. And I have kids - gotta add choco chips! Oh and since I love cinnamon, I added maybe 1 tsp of that. They took a bit longer to bake, were too soft while warm to eat, but once they cooled, amazing taste! I wish I could customize this one but I'm not a paying member so there goes that idea. :) Great recipe though, I am sure even without all my subs the original would be just as amazing.

Classic Waffles

A great basic recipe! I subbed whole wheat flour and honey for the white flour and sugar. The waffles were a bit on the heavy side but I'm sure that's why. The taste was great and the kids loved them!

Mom's Meatballs

Did I do something wrong? The ONLY thing I did NOT do was the Worcestershire sauce bc I had none. I brought the recipe down to a pound of ground beef since it was just for us and followed everything else. They fell apart after 15 mins in the oven (they were not ready at 10). I have now thrown them into our sauce and hoping they will firm up a bit. The onion is also crunchy and totally not cooked either after the baking!

Buttery Corn Bread

Ok so my kids loved it...but it did not taste anything like corn bread!~ There is so little actual corn meal in the recipe that it really was more like a sweet bread (and very very sweet, I even used less sugar than it called for and it was still very sweet). So I think this would make a great easy base but for me personally if I am looking for CORNBREAD, this needs a bit of work.

Oatmeal Whole Wheat Quick Bread

Used coconut milk to make these dairy free and baked them in cupcake tins. I cannot believe how easy and YUMMY they are. Impressed and totally adding these to my regular rotation! Thank you!
