Creamy Rice Pudding

Amazingly Good! Erica, You so Rock!!! I made this recipe just as written with no changes to the ingredients. It is so yummy and best of all, easy enough for even inexperienced cooks. Since I am an experienced cook I know all of the tricks of cooking the rice with the salt AND sugar in the water for the initial boiling period so it will all be absorbed into the rice. I used aproximately 1/3 of a cup of the warm liquid of the second boiling to temper the beaten eggs so as to not scramble them. And lastly, I just used one pan for the entire process to save on the clean-up. This is probably the best Rice Pudding recipe that I have ever tried, and believe me I have tried a bunch!

Perfect Pumpkin Pie

I have been making this recipe for years rave reviews. I make a few minor modifications by way of increasing the cinnamon and ginger. I also mix in a little cinnamon and sugar to the dry crust ingredients to liven up the crust a bit. Also, for those of you who were complaining of a soggy crust bottom, you may want to try a trick my Grandma taught me years ago: after placing your uncooked pie crust in the pan, trim and flute the edge. Then take a dinner or salad fork and place multiple fork pricks all around the side and bottom of pan. It comes out perfectly done and if you have not over handled it, perfectly flaky every time.

Pretzel Turtles

These are simply the best! I changed the pecans for marschino cherries on some of them for those in my family with nut allergies (and picky kids). They disappeared so quick that I had to make more before the guests arrived! Lucky for me they are so quick and easy to make. Definately make these using the Dove brand chocolate carmels and the square pretzels. They make such a pretty and neat pair. Great Recipe!

Pistachio Bundt Cake

BE SURE AND REDUCE THE BAKING TIME!!! I followed the recipe exactly and the taste is very good, however the cake was extremely over baked! Next time I would follow the baking directions that are listed on the cake mix box. I would also add some almond extact to the cake as well as the glaze.

Melt In Your Mouth Pork Chops

These pork chops really do live up to their name! My husband and very fussy mother-in-law loved them. Said this was a keeper! I just made a couple of slight adjustments for our families dietary needs. I used about 1/2 the amount of the soy sauce (and used low sodium variety) due to a salt restriction, due to using less soy sauce, I doubled the teriyaki sauce. I also, substituted 1/2 the amount of water with pineapple juice. Delicious!

Jamaica Coffee

This is really yummy! I made this using cinnamon decaf coffee, spiced Captain Morgan's Rum, & Kalua. It was the perfect get ready to unwind for the night beverage. I highly recommend.

Healthy Turkey Loaf

My family loves this meatloaf! However I do beleive that the amount of turkey called for in the recipe is a misprint because 1/2 lbs is not even a burger size in some households. So to make this loaf for our family of 5 (3 adults, 2 small kids) I used 2 1/2 lbs ground turkey. And it made a normal sized meatloaf. Also, because we have a pepper dislike in our family I just used the salsa and added a little garlic powder and basil leaves to the mixture and increased the eggs to 2.

Mushroom Blue Cheese Turkey Burgers

I made this recipe using a mix of blue cheese and feta crumbles just mixed in with the rest of the mixture and grilled on the George Forman. I also used canned mushrooms since I did not have the fresh on hand. Served on toasted sourdough bread. My family absolutely LOVED these burgers! Said they can't wait to have them again!
