Jamie's Cranberry Spinach Salad

This recipe is excellent!! I only have a couple of things that i want to add. First is that the finished product doesn't look to appetizing, probably because the yellowish color of the oil is too prominent. Adding some diced up cranberries and letting stand for a couple of hours will add some nice coloring to the mixture. Using red onions in place of the plain will have the same effect. Secondly, instead of toasting the almond with butter, toasting them in the toaster oven for 5 minutes will give it that toasty flavor minus the grease. I used left over pecans from the pecan pie and it blended well with the dressing. The amount of sugar can be adjusted, too, to the level of sweetness desired. This recipe is a hit every time!!!

Real Homemade Tamales

This recipe was very easy to follow. I replaced plain water with the broth made by boiling the pork meat (cooked onion and all) when making my chili mixture and added extra dried chile pods to thicken the sauce so there was no need to strain. This added extra flavor to the meat when mixed in together. My family just loved it!

Maple Salmon

my family loves this recipe so much that they don't let me try anything else! One thing that you've got to remember to do is keep basting it about 10 minutes into baking otherwise it will get to dry. Great recipe...thank you for sharing it!!!

Green Beans With Walnuts

I, too, could not find walnut oil at the groceries and sub'd it with evoo and it came out just as flavorful. this went excellent with the prime rib that i was serving. one draw back that i had was that since i needed enough to serve 12 people (about 3 lbs) with beans straight out of the refigerator, i had a difficult time getting the heat evenly distribute throughout in time to maintain the "freshness" of the beans. some of the beans had started to get the "over-cooked" look that i had tried to avoid. next time, i am going to bring the beans down to room temp before i try making huge portions again. excellent recipe and super easy to make~!!

Garlic Prime Rib

I followed this recipe to the 't' and it came out perfect! I had cooked this for a Christmas party for about 13 people and served it with creamed corn and green beans. Everyone ended up having 2nd and 3rd servings!

Peruvian Aji Sauce

the sauce came out a little too bland so i tried adding about a table spoon of salt as well as some cilantro. this made the sauce a little more flavorful and everyone just enjoyed it. Thanks for sharing this recipe!!

This is a wonderful recipe, but a little to greasy. I think I might try a little less olive oil and a little more clam juice the next time around. Excellent recipe. Thank you!!
