Funnel Cakes IV

We used half coconut oil and half canola for frying. The recipe was terrific! We went to the state fair yesterday and a $10 funnel cake was not in the budget. These were even better and much more fun and economical. The kids completely enjoyed watching/helping.

Best Ever Banana Bread

good but a bit too salty for our family. i might leave the salt out next time and let the baking soda take care of the saltiness. :)

Pepperoni Dip II

This was great but a little bland for my taste. (This could be due to mild pepperoni.) I added a clove of garlic and a tablespoon of mince onion, blended it in the food processor. Then it was EXCELLENT and very easy. Definitely a keeper.

Cream of Pumpkin Soup

I used fresh pumpkin and the soup turned out good, but WAY TOO SALTY. i would leave out the salt all together. (i boiled the pumpkin chunks, drained and reserved the liquid, pureed the pumpkin and added chicken bouillon to the reserved liquid.)

No-Fuss Rolls

Easy, tasty, and versatile. I use these as shortcake for strawberry shortcake, as a breakfast muffin base, and as a dinner roll with homestyle meals. (I only add a pinch of sugar when making them for dinner rolls) they are GREAT with jam or honey. My whole family loves them. FYI..I SUBSTITUTE 1 EGG FOR THE MAYO.

Pinto Bean Cake

i give this 5 stars for the flavor/texture/fiber combo. I really enjoyed this cake. It was very filling as a "healthy" sweet snack. I will bake it a little longer next time due to the very moist and dense texture.

Pizza Dough I

Great....for a fast pizza dough recipe. I used 1 cup whole wheat and 2 cups all purpose flour. This made enough for 2 large THIN crust pizzas. I plan to cut the recipe in half next time.

Easy Chocolate Chip Pound Cake

This has an old fashioned grandma made it cake taste! I used sour milk in place of the water and cut the oil in half. It is very very tasty.

Chocolate Brownies

These were the best brownies I have ever made. I gave them four stars due to some changes.... 1 cup sugar because some said they needed to be sweeter. 1 egg rather than 2 because that made them fudgier, and 1/4 cup p-butter to compensate for the lack of one of the eggs. Also, I used dark choc cocoa because that is what I had. They turned out very fudgy and dark and tasty. By the way, the batter was very thick like cookie dough.

Black Bean Spinach Pizza

I put the beans, onion, spinach, spices, cilantro and hot sauce into my food processor and made a chunky paste to spread on the crust and then topped with the salsa and cheese. It was a GREAT success. Thanks for the idea!

Oatmeal Chocolate Chip Muffins

I cut the sugar to 1/2 cup and I cut the salt to 1/2 tsp. The muffins were still plenty sweet and salty! It was a great morning treat for my children who don't eat oatmeal!

Overnight Coffee Cake

I did not wait overnight for this recipe and it came out great, it took about five minutes less time to bake than suggested. My husband was wild over it.
