Curried Citrus Quinoa with Raisins and Toasted Almonds

Very nice lunch option- good at room temperature. Nice blend of flavors- I did add a splash of Braggs apple cider vinegar to balance the sauce out. The almonds add a nice crunch. I didn't have red onions, so for color and more veggieness I added peas and finely diced carrots. PS, a heaping tablespoon OJ concentrate seemed to work just as well. Def will go into regular healthy lunchtime rotation.

Baked Delicata Squash with Lime Butter

Great recipe- only disagreement is that baked around 1 hr. Only alteration I made was use 2 T butter which seemed adequate. Easy prep, healthy, unusual but agreeable flavors. Served with salmon (panfried with no seasoning) and let the excess sauce flow from the squash to the fish- which was quite tasty. I'm planning on growing delicata squash in my garden next year based on this recipe!

Thanksgiving Beets

I wanted to try this because though I am a big fan of beets- they are not very versatile (every recipe seems to be pickled or roasted with goat cheese!) Only change I made was to use maple syrup. Found it took WAY longer than 10 minutes to cook beets, and then recipe was too sweet and cloying with cloves. Was good enough to serve for a casual dinner with parents, but wouldn't repeat or even save recipe to tinker with. Next time goat cheese it is...

Mexican Whole Wheat Flour Tortillas

I used unrefined coconut oil for recipe. They are that much better than store bought (in fact I ate one plain which I would NEVER do with a store bought) but a lot of work for rolling out. My edges were really crinkly- not sure if that was due to type of shortening or....? Would try next time with olive oil maybe.

Rosemary Shortbread Cookies

I ran out of white flour, so I had to sub about 1/2 white whole wheat, but I didn't actually think it adversely affected the flavor, just found that they needed to bake 13 min to get lightly browned. I found the cookies a little too subtle. I did a trial batch where I sprinkled small amts of coarse salt on top and that just gave the cookies an extra POP. not too salty either. I def will repeat these cookies with all white flour but every batch will have coarse salt on top. try a few, you'll be glad.

Sugar Cookie Cutouts

Very disappointing! I made a patch for my easter cookies. Flavor was bland, and they puffed up with an unpleasant cakey texture. Could barely be rescued with creamcheese/coconut frosting.

Coconut Macaroon Brownies

HUGE disappointment- made for my valentine after reading several great reviews. Flavor was generic/boring, coconut layer pulled apart from chocolate. And was a big hassle to make spreading dough. Probably worst recipe I've done from this site.

Make Ahead Lunch Wraps

Was a little boring- nothing new or interesting, except the idea to throw in corn into mexican burritos. Easy though, still glad that have a vat of lunches now in my freezer! so in the end I'm glad I tried. I think this recipe is only for a person tackling burritos for the first time, otherwise you can do better.

Curried Leek Soup

One of the tastier low fat soups I've made. I really like the idea of using nonfat condensed milk. I used veggie bouillon base instead of chicken. I also added 4 small finely cubed yukon gold potatoes, only because I had them. Yum!

Coconut Curry Tofu

Sinced I deleted a few ingredients (didn't have green onions/basil) I base review not on taste (though it was good) but on very thin sauce- I even boiled down for extra time and was still watery.
