This has become our "go to" dinner when I dont know what else to make because its actually very quick and easy, I almost always have all of the ingredients for it, and we never get tired of eating it!

Grilled Eggplant Moussaka

WOW! Although this dish is a little bit time consuming, it is not difficult and it worth every minute! I followed the advice of some other ratings and I oven roasted my veggies in some olive oil, and instead of using fresh tomatoes, I used some leftover homemade tomato sauce. It was better than the moussaka at my local Greek food festival!

Jerk Seasoning

I swapped dried minced onion for fresh minced onion, rubbed it on some porkchops, poured some pineapple juice over them and let them marinate for about 2 hours- BEST PORK CHOPS EVER!

Bubba's Jambalaya

This might be my new favorite recipe! It just so happened that I had needed to use up some shrimp and some kielbasa so this was perfect. I followed the recipe pretty closely which is unusual for me. The only changes I made were 1. I left out the celery because I dont like cooked celery. 2. I left out the ham because I didnt have any. 3. I added a few shakes of Franks Red Hot before serving. The dish was very tasty without it, but I was craving the heat. I was most surprised how thick and creamy it was! I dumped generic long grain white rice right into the pot, boiled it for 10 minutes and then shut off the stove and in 30 minutes it was like creole risotto! YUM!

Coconut-Lime Cheesecake with Mango Coulis

WOW the crust for this cheesecake is ingenious! I think that the coconut lime flavor is so great on its own that you dont actually need the mango coulis- but if you like a saucy cheesecake than its an excellent way to go. super easy too!!!!!!!

Easy Pie Crust

I made this with olive oil because I was using it for a quiche, I found it to be a bit too oily, but my friends LOVED the quiche and I will definitely use this recipe again with canola oil- making this crust was faster and easier than driving to the store and buying one already made.

Spinach Bacon Quiche

I combined this recipe with "Easy Pie Crust" and took it to work for a potluck. One of my coworkers, who says she does not like pie crust or eggs, devoured almost half of the quiche by herself... plus it was super easy and you can be really loose with adding or leaving out whatever meats and veggies you want.
