Delicious Ham and Potato Soup

My pickiest eater had seconds!! I made way too much roux, because I was trying to increase the recipe, and I don't always follow measurements exactly when I do that. So I ended up adding enough to make it creamy and good, then got rid of the leftover roux. I loved how simple this was- the hardest part was the chopping, but even that is made easier with a food chopper (Pampered Chef). Thanks!

Three Ingredient Peanut Butter Cookies

These were so fun to make with my boys! I doubled the recipe, and added some vanilla. Also, I changed the sugar to include brown sugar: 1/4 white, 1/2 brown. Be sure to leave them on the cookie sheet for a bit to cool, I tried to transfer them too quickly and it fell to pieces! (Still very tasty though...gave me an excuse to eat them really warm!) I rolled mine in white sugar and crisscrossed them with a fork. The boys loved to help me in the kitchen (they are 3 and 2).

Alaska Salmon Bake with Pecan Crunch Coating

Made this for our Christmas dinner, just my husband and I and toddler boys. Although the boys didn't eat it (they never really eat anything), we LOVED it. I substituted maple syrup (thanks to a previous review) for the honey and walnuts for the pecans. Served with herb buttered baby carrots and zucchini, and Garlic Mashed Red Skin Potatoes (also from allrecipes.com). WIth some white wine, a wonderful Christmas meal. The parsley made the pink salmon look so festive!!

Best Ever Banana Bread

My husband LOVES banana bread and this is the best recipe that I have found so far.\ Every time I make this it is perfect. Today I dusted the pan with sugar like one person suggested, and it made the crust SOO good. Not a healthy treat, by any means, but it is OH so yummy!

Curried Lentils

I like this recipe because there are so many add-ins that you can use, and the ease of playing around with the base recipe. When I made it, I added some chicken that was chopped up and had been 'marinated' in curry powder. I also had it with coconut sprinkled on top. I used a full can of coconut milk. If I remember, I cooked it a bit longer than what is stated to get it down to the desired consistency. Eat with naan bread and rice.
