Whoopie Pies VIII

I used a whoopie pie baking pan which helps make them uniform in shape. They tasted like muffin tops. Outside is crisp but inside is moist and soft. I used a simple butter cream recipe for the filling. I would make these over and over again for friends and family. They were gobbled up on Christmas day. AWESOME RECIPE!

Lower Fat Banana Bread II

I tweaked this recipe after reading reviews and it came out PERFECT! The changes I made: 3 very ripe small/med bananas 1/3 c lightly packed brown sugar 1/2 c white sugar 2 tbsp oil 1 tsp vanilla 1/3 cup almond milk Added: 1/3 cup coconut flakes (adds a yummy texture) cinnamon (good amount), ginger and nutmeg Omitted -applesauce since I added a 3rd banana -walnuts (just didn't have any at home) I used 2 loaf pans, a regular size glass loaf pan and a mini 5 1/2 x 3 pan. The mini loaf took 40 mins and the regular loaf took 45 mins. I would keep a close eye on it and keep poking it with a toothpick. As soon as it comes out clean, it's done. This is definitely my go to banana bread recipe. It's not extremely sweet but very moist with a soft banana flavor.

Chocolate Rocky Road Cookies

i love this recipe. its super easy and it taste delicious. its not too sweet and it come out very moist. its a bit like a cookie cake. what i changed is i added marshmallows inside the batter by taking mini marshies and cuting them in half and folding it into the batter. i made half with nuts and half without. i prefer without nuts because cookie is more denser, chewier and you taste more the of cookie dough.

Pecan Pie Bars I

This is a winner. I followed the recipe exactly and it turned out delicious. My friends and coworkers love these bars. Sometimes I drizzle dark chocolate over the top! Pecan lovers beware! You'll be addicted.

Chewy Coconut Cookies

I followed the directions and they came out perfect! I would bake for 10 minutes and I rolled mine into 3/4 " balls. Next time i'm going to add white chocolate chips. A definite winner cookie/.

Chocolate Truffle Cookies with Sea Salt

These are a smash hit! My tips would be 1) add 1/4 cup more flour, 2) refrigerate for at 20-30 minutes or more 3) make them uniform and round as possible since they do spread and they spread unevenly. Making them look pretty was not easy but they taste like decadent truffles but in a cookie shape. I sliced up caramels and garnished each cookie in the center with a caramel slice.

Molasses Sugar Cookies

Super easy, my hand just got tired from mixing. The dough is thick. This cookie is sweet and has just the right amount of spices. My kitchen was infused with the smells of cinnamon and ginger. This cookie emobdies the holidays so I am glad I found this recipe. I baked these for only 9 minues only. They came out chewy and were perfectly crackled on top (i love that look on cookies). They are definitely going to be on my Christmas baking list. I also stored the extra dough in the freezer and it kept well for a week. TIP: If you over bake your cookies so they hard and not chewy, don't throw them out. Crush them up for an ice cream topping or they can be layered in a trifle!

White Chocolate Macadamia Nut Cookies IV

These cookies are amazing! I even love eating the cookie dough. I refrigerated my dough for half an hour. They didn't spread very much or puff up, so I recommend making tablespoon size balls (the size of a ping pong ball) and flatten them with a spoon or even your fingers. I recommend adding coconut. I took the half the batter and added shredded coconuts. It ended up taking delicious!

Chocolate Eclair Cake

Delicious. This has to demolished within a day or two, any more than that the cracker gets too mushy but a winner at all the HBO Sunday parties I brought it to! I sprinkled mini chocolate chips for a lil more chocolateness.

Maple-Bacon Chocolate Chip Cookies

this is a good base recipe however I highly recommend you do the following add 1/2 cup of flour (2 1/2 cups of flour total), add 1/2 tsp of baking powder (1 1/2 tsp of baking powder total), add a tablespoon of bacon grease (reduce butter to 3/4 c of butter), and add 1/4 c of bacon (1/2 cup of bacon total). also its really important to have this batter chilled so it doesn't spread when you bake it. my friends LOVED my cookies. i hope this helps people out.

Pumpkin Whoopie Pies

I don't know what happened. I bake all the time. They tasted too doughy. Texture was off. Does 1 can of pumpkin = 1 1/2 cups of pumpkin puree. Maybe that's why the recipe was off.
