I omit the celery seed. I also use frozen mixed vegetables and cook them in the chicken broth to keep all of the nutrients in the dish. Can be baked 400 F for 30 minutes (or 375 F for 45)...unril golden brown and hopefully thickened. Can freeze once you've thrown it together. Then just thaw and bake.

Peanut Butter Cup Cookies

Off the hook!! great recipe...used whole wheat flour and natural peanut butter...wanted to use up my dark chocolate kisses. used approx 2 tsp of dough for each drop and used cookie sheets. Just fab.

Rolled Dumplings

Can throw some chicken in w/ the broth. I use whole wheat flour and butter (instead of shortening). I'm sure they aren't as flaky as a result, but are still fine.

Coffee Butter Frosting

I used 2 c powdered sugar, 1/3 c butter, 2 T special dark cocoa powder and 3 T espresso. it was just barely enough to cover a double layer chocolate cake. Great taste. I think next time I'll use 3 c powdered sugar, 1/2 c butter, 4 T cocoa and 3 T espresso dissolved as much as it will dissolve in 3 T water or milk. Add milk to the right texture.

Downeast Maine Pumpkin Bread

used 1/2 c olive oil, 1/2 c apple sauce. 2 c sugar, splash of vanilla and no nutmeg. Made 12 muffins and med size loaf of bread. Very good

Apple Crumble Pie

used 3 macintosh and 1 gala. mixed apples in 1/4 c white sugar, 1/4 c brown sugar, 1/8-1/4 c flour and cinnamon. Then put them in crust and crumbled on topping. Awesome.

Too Much Chocolate Cake

I used 1/2 c oil and 1/3 c milk (thanks to other recommendations). I also used the smaller regular size of pudding. Fabulous. Drizzled with melted chocolate chips w/ a little heavy whipping cream or milk added to make it the right thinness. Quick and very good.

Dirt Cake I

I used 1/4 c butter and only 2-4 T powdered sugar. I also whipped 1 c heavy whipping cream w/ 2 T powdered sugar in place of the whipped topping. Very good. Next time I'll omit butter altogether.

Vegetable Dill Dip

Changes I made: I used around 3/4 c of mayonnaise, 1 tsp onion powder (instead of minced onion) and 1 tsp Old Bay Seasoning™ (instead of Beau Monde™). Excellent! Everyone loves it.
