Tex-Mex Turkey Soup

My husband kept on eating and eating with a few comments on how good it was. I was not able to make it with all the ingredients in this recipe but must of them I had. I substituted the tomato soup for tomato sauce/paste and I added paprika.

The Best Rolled Sugar Cookies

Perfect cookies. I always keep a batch in the refrigerator and sometimes use as a home made cereal (I cut them with small cutters). Or to serve with tea or coffee when with my friends

Margarita Cake

I made this in 2007 as the recipe calls for (exept I used strawberry cake mix b/c thats what I had) and it turned out plesantly good. The adults thought it was a very nice cake and the kids were wishing they were adults to try it. I made this again in 2009 and I followed some of the advices in the review poll (more of this, more of that if you know what I mean). I would recommend the recipe to be followed as is. Maybe you can change the cake mix flavoring and adjust the icing to taste- I did double amount of icing both times, one for when the cake was still warm and the last before serving. PLease give this cake a try as is first. Ah! and don't use margarita mix!!! The second time it tasted somehow odd.

Greek Tzatziki

Ok this is really good. It taste like restaurant style. I was not able to add dill, it tasted good anyway. For the summer this has no price as is lite and refreshing. I would recommend to adjust the lemon to your taste and the salt too, but if you don't do anything to the recipe you would not be dissapointed. I agree with others about the runny texture. I solved using regular yogurt strained or greek yogurt and to allow the cucumber to drain the water . To drain the cucumber you could add a little of salt and drain for half to an hour - don't forget to adjust salt in the recipe if you do this).

Spicy Indian Chicken Curry Yummy

This could be really spicy for some people. The more you let it sit the better it taste. I didn't have the ingredients whole but I used them grounded. I would brown the chicken next time. I did add chicken stock, carrots and potatoes. I didnt have rice to go with it and I put two envelopes of Ramen soup noodles in the pot at the end and it was different but really good. Overall I found it very good and so my family. The second day though we all found it excellent. I originally gave 4 stars and I had to change it to 5.

Buttery Soft Pretzels

This was a super easy and party pleaser for the 2011 Oktoberfest celebration. I would only say that for a more traditional crust to simmer the water with baking soda and let the pretzels in the water until they float and spoon them out. But even if you dont do this step and just follow the recipe as is, you will be a party star.

Classic Tiramisu

I could not find soft lady fingers and had to brew coffee to make them soft. I like the liquor on mine so I did 2/3 C. 1/3 for the coffee and 1/3 to brush on top. My lady fingres had a sugar crust and sugar in the coffee was not necessary. This is a very good recipe and you will not be dissapointed. I will do less sugar next time 3/4C (it takes a while to dissolve with the egg yolks) and will add 1/2C of confectioners sugar to the whipped cream.

Apple Kuchen

At first this was a dissapointing recipe. It came out crumbly, undercooked and needed moisture. However this is one of the most forgiving recipes and after adding milk and another 1/4 C of shreded butter on top of the whole thing and putting it in the oven again for another 15 minutes, it was soooo delicious. I would definitely cut the sugar to half (usually the cake mixes are pretty sweet). I topped with homemade vanilla icecream and my guests were asking for seconds. Works well for pears too and white cake mix.

Spring Rolls

I just added a tablespoon of sugar to the mix and sustituted the vermicelly for shredded cabbage this is a great recipe. It goes well with a sweet/sour/spicy sauce on the side, made with red pepper flakes, cornstarch, vinegar, water, sugar and grated onions you might need to add red color for aesthetics.

Ten Minute Enchilada Sauce

Enchilada sauce is a little labor intensive compared to this one. This sauce is very similar to what you would get at any "authentic" mexican restaurant in the US. I like it and my family too. I do use real onions (4 TBS), garlic (1/2 TPS)and regular flour and I add chicken buillon to the water (to taste) I add salt if needed. This is still easy and it gives the homemade taste that maybe the powders cant. Good luck!!!

Mexican Ceviche

Great recipe. I take out the garlic and add cumin, salt and white pepper to taste. Use already cooked shrimp if in a rush. Top tortillas with ceviche and ketchup (it makes a big difference).

Champagne Shrimp and Pasta

I love simple food that has ingredient balance and this is one of those you have to try if you like cream sauces, pasta and shrimp. I didn't have the shallots and I made a combination of onion and garlic instead, also added red bell pepper. My family loved it. Will make again.
