Mexican Rice III

Andale, andale! Arriba, arriba! This is a good recipe for Mexican Rice. If you want to add bit more color you can use sazon accent or goya with achiote. Even though this is not the authentic way of making Mexican rice it does has all the ingredients. It will not be Spanish rice which in many places is called Mexican.

Ten Minute Enchilada Sauce

Enchilada sauce is a little labor intensive compared to this one. This sauce is very similar to what you would get at any "authentic" mexican restaurant in the US. I like it and my family too. I do use real onions (4 TBS), garlic (1/2 TPS)and regular flour and I add chicken buillon to the water (to taste) I add salt if needed. This is still easy and it gives the homemade taste that maybe the powders cant. Good luck!!!

Italian Style Pork Chops

Easy, simple and really good. I made it on the stove (on a heavy skillet) in the low setting (turning them once) and then in medlow to make it crispier. Beware of the cheese that will stick to the skillet or the spatula if not crispy enough. Overall it cooked very nicely. I used ritz cookies and the taste was really good. I will make it again.

Taqueria Style Tacos - Carne Asada

Good tacos. My family liked it and my non mexican friends thought it was really good. The fixings made the taco experience on this one. I personally have had the taqueria stand carne asada tacos in my many trips to MX and this are good but not the same. All that said it is a keeper as most people loved it.

Quick and Easy Brownies

I think this recipe has too many leavening agents and make it come more like a cakey brownie. If you like cakey brownies this is the one to keep.

Margarita Cake

I made this in 2007 as the recipe calls for (exept I used strawberry cake mix b/c thats what I had) and it turned out plesantly good. The adults thought it was a very nice cake and the kids were wishing they were adults to try it. I made this again in 2009 and I followed some of the advices in the review poll (more of this, more of that if you know what I mean). I would recommend the recipe to be followed as is. Maybe you can change the cake mix flavoring and adjust the icing to taste- I did double amount of icing both times, one for when the cake was still warm and the last before serving. PLease give this cake a try as is first. Ah! and don't use margarita mix!!! The second time it tasted somehow odd.

Greek Tzatziki

Ok this is really good. It taste like restaurant style. I was not able to add dill, it tasted good anyway. For the summer this has no price as is lite and refreshing. I would recommend to adjust the lemon to your taste and the salt too, but if you don't do anything to the recipe you would not be dissapointed. I agree with others about the runny texture. I solved using regular yogurt strained or greek yogurt and to allow the cucumber to drain the water . To drain the cucumber you could add a little of salt and drain for half to an hour - don't forget to adjust salt in the recipe if you do this).

Mediterranean Rice Salad

I don't have much experience with Mediterranean salads but I was a bit dissapointed with this one. It lacked something. I added more vinegar and oil, added oregano, salt, pepper... and still it lacked something... I added feta cheese... still lacked something. Maybe a little lemon juice and flat leave parsley or basil. I didn't add the pickle b/c I didn't have it and I didn't see it fitting into the mediterranean concept. Was the pickle the secret ingredient? Over all, not bad experience, but not super either.

Spicy Indian Chicken Curry Yummy

This could be really spicy for some people. The more you let it sit the better it taste. I didn't have the ingredients whole but I used them grounded. I would brown the chicken next time. I did add chicken stock, carrots and potatoes. I didnt have rice to go with it and I put two envelopes of Ramen soup noodles in the pot at the end and it was different but really good. Overall I found it very good and so my family. The second day though we all found it excellent. I originally gave 4 stars and I had to change it to 5.

Strawberry Pie II

cut the sugar to 3/4 and why the water? no need for water just lemon juice (1 TBS) and voila! Reminds me of the Park Cafe pie in St. Marie Montana. Really good stuff. It holds for about 3 days with the same great taste and texture.

Fresh Strawberry Pie I

I think I preffer a recipe without gelatine. Don't like the rubbery texture after the first day. There is another recipe without jello (using conrnstarch) that I like better- Strawberry Pie II.

Tex-Mex Turkey Soup

My husband kept on eating and eating with a few comments on how good it was. I was not able to make it with all the ingredients in this recipe but must of them I had. I substituted the tomato soup for tomato sauce/paste and I added paprika.

The Best Rolled Sugar Cookies

Perfect cookies. I always keep a batch in the refrigerator and sometimes use as a home made cereal (I cut them with small cutters). Or to serve with tea or coffee when with my friends

Champagne Shrimp and Pasta

I love simple food that has ingredient balance and this is one of those you have to try if you like cream sauces, pasta and shrimp. I didn't have the shallots and I made a combination of onion and garlic instead, also added red bell pepper. My family loved it. Will make again.
