Mexican Ceviche

Great recipe. I take out the garlic and add cumin, salt and white pepper to taste. Use already cooked shrimp if in a rush. Top tortillas with ceviche and ketchup (it makes a big difference).

Buttery Soft Pretzels

This was a super easy and party pleaser for the 2011 Oktoberfest celebration. I would only say that for a more traditional crust to simmer the water with baking soda and let the pretzels in the water until they float and spoon them out. But even if you dont do this step and just follow the recipe as is, you will be a party star.

Flourless Peanut Butter Cookies

Awful, I followed the instructions but apparently something is missing and this came out cumbly and not quite a cookie feel. I dont have enough experience with cookies to figure out the problem. They didnt taste good either, they were to sugary.

Mom's Sweet Potato Bake

I followed the advice of other cooks and omitted the sugar from the sweet potatoes and used my hand mixer to mix the ingredients. I did infuse the milk with spices before using it, but this casserole fell short in flavor, thanks to the butter it had some flavor. I found the topping too sweet for the potatoes. If you like dense casseroles do not use the mixer but smash the potatoes by hand. I will add the sugar to the sweet potatoes next time, the topping makes it a necessity, but I will do 1/2 C, I will add spices to it too, at least cinnamon.

Spring Rolls

I just added a tablespoon of sugar to the mix and sustituted the vermicelly for shredded cabbage this is a great recipe. It goes well with a sweet/sour/spicy sauce on the side, made with red pepper flakes, cornstarch, vinegar, water, sugar and grated onions you might need to add red color for aesthetics.

Mexican Rice II

Good mexican base rice. If you have other mexican strong dishes, like enchiladas or mole, then this is a good side dish. I really preffer to add chopped tomatoes instead of tomato sauce, bc the sauce becomes too overpowering and I fry some achiote seed in oil to give the red/orange color (I remove the achiote seeds after the color has been released). I add this oil as needed.

Classic Macaroni Salad

I definetely would say this is a great macaroni salad starter. The you can add other stuff. Mine I like with a mix of sour cream and mayo, eggs, roasted red bell peppers (from a can), parsley or any green herb - not rosemary. You can make yours a five star easily.

I think I liked it better without the sourcream. But hte sourcream would be awesome if you are having this meat with plain potatoes. It doesn't taste bad, it is just that without the sourcream it was more of my kind of dish. I marinated it for 24 hours but next time I will do as Germans do, 2 to 3 days. The meat came out super tender we cut it with a fork. I will do this dish again.

Authentic German Potato Salad

I thought I was going top my friend's german potato salad, but this one somehow didn't. Her recipe is from good house keeping magazine. With that said I thought it is good, just not spectacular. I did add a little broth from a homemade onion soup and it tasted better than without it.

Pork and Pepper Stir Fry

This is a good basic stir fry. I tried with vegetables instead of meat. I didn't have the teriyaki sauce instead I added some stuff I had in my pantry just to use it up, like eal sauce and oyster sauce. It was a hit.

Pan de Muertos (Mexican Bread of the Dead)

This is a light bread, kind of fluffy and tasted fine but bland. The anise is not overpowering. Pretty easy to make. To me it was like the cross between a bread and a bisquit.
