Pumpkin Pecan Cheesecake

I was pleasantly surprised by this recipe! I made it twice for Thanksgiving (for my family & my husband's family), & it was enjoyed by everyone. My dad & brother even said it was the best dessert I've ever made (and I'm always the one in charge of dessert)! It proved to be a bit time-consuming, what with having to make the pumpkin butter & all, but I think the outcome was worth it.

Suzy's Mashed Red Potatoes

I bought a 5 lb. bag of red potatoes to make mashed potatoes for dinner last night, & I ended up making this recipe last night & tonight as well because they were so delicious! I think the sour cream makes them sooooo creamy and yummy! They may even be better than my mom's mashed potatoes (which I love)...don't tell her I said that! :) Thank you so much for this recipe...I will be using it often!

Boneless Buffalo Wings

Great recipe! This is actually one of the first times I've ever fried anything, so I was a bit nervous. I shouldn't have been...this chicken turned out wonderful! The only thing I did differently was to add a couple extra ingredients to the hot sauce based on another buffalo sauce recipe on this site. I tasted the chicken before tossing in the sauce, & it was delicious! So either way, a great meal!

Holiday Chicken Salad

This is one of our new favorite recipes. My husband doesn't usually get excited about food (much to my disappointment :) ), but he raved about this recipe the first time I made it & now requests it weekly. I also made it for a baby shower this weekend & served it on croissants & it was a big hit! I use a rotisserie chicken for convenience & flavor & leave out the onion & pepper. Thanks for a great recipe!

Cream Cheese Pickles

These were a pleasant surprise! 5 stars for ease of preparation & taste that I think would appeal to a lot of people (provided that they like pickles, of course!) I made these this past weekend as a last-minute appetizer to add to my spread for a baby shower I hosted for a friend, & they got eaten up! I used both roast beef & ham & I thought both were yummy, although I think roast beef was preferred by more people. Definitely a simple, no-fuss appetizer that's great for parties or snacking!

Jamie's Minestrone

Absolutely delicious! I have been wanting to try a minestrone recipe for awhile, & I am so glad I picked this one! It is a bit time-consuming to chop all the vegetables, but I would say it is well worth the effort. I ended up adding more chicken broth & tomato sauce, simply because I added extra kidney beans & some cannellini beans, & I like a lot of juice in my soup. I also used dried basil & oregano with good results. Because of my additions, we ended up with tons of leftovers (not a bad thing! :)) This is a very hearty & filling recipe, but very healthy. A new favorite!

Cookies 'n' Creme Fudge

Oh my goodness I love this recipe! It turned out even better than I expected. I was skeptical because my previous attempts at fudge have been less than stellar, but this was awesome! I wanted to find a good recipe to use for Christmas gifts, so I tested this one out beforehand & brought the leftovers to work. My coworkers loved it! Now I plan on taking it to all my family gatherings over Christmas- it might just become one of my signature desserts :). I can't wait to try it with the mint Oreos- they are my favorite!

Chai Tea Mix

I have been dying to try this recipe for a long time, because I am obsessed with chai lattes, but it gets expensive buying them from coffee shops, & the mix that I like is not available at most of the stores close to my house. I whipped this up in about 10 minutes & immediately fixed myself a mug (with milk, so it was like a latte). I am very impressed! It tastes very close to the chai lattes I know & love. The only thing is, one of the spices is a little too overpowering for me, I'm just not sure which one it is (it may be the cardamom, which I am not very familiar with). Either way, it is a delicious recipe, & it's so nice to be able to make a big batch & have it around for all those chai cravings I have! I can't wait to share it with my mom, who also loves chai but is a diabetic, so she can make the sugar-free version. I also plan on giving some away as Christmas gifts, & I'm sure they'll be a hit! Thanks so much for the recipe!

Easy Pancakes

These are great! I followed the suggestions of other reviewers & cut the baking powder back to 2 teaspoons, & cut the salt back a little as well. I've made these several times on Saturday mornings for my husband & have made minor additional changes (based on what I have on hand or what mood I'm in :)), but the basic recipe is very simple & delicious, especially for someone who doesn't keep pancake mix on hand.

White Almond Wedding Cake

Delicious! And I love that the base is a boxed cake mix...makes it that much easier :). I frosted it with just a store-bought chocolate frosting & it was great! Can't wait to try it with other frostings/fillings/fondant :).

Spicy Refrigerator Dill Pickles

Yum! I was so excited to try this recipe, & I was not disappointed! I'm a huge pickle lover, & these tasted really similar to one of my favorite kinds of pickles. The only change I will make next time is to probably eliminate the sugar completely. I only put in between 1-2 tablespoons, & I still wasn't a fan of the sweet taste. I guess I just like my pickles sour :). Overall, though, really great recipe!

Salmon with Dill

This recipe is fantastic! I can't believe it took me this long to review it...I've been making it pretty much every week for a couple months :). I have never been a big salmon fan, but I started looking for different salmon recipes to try because I knew it was something we should be eating for the health benefits. After I tried this recipe, I stopped searching & it's now the only one I use. I make a couple of minor changes when I make it...I squirt a little bit of lemon juice on the salmon before seasoning, & instead of using the pats of butter, I just spray some "I Can't Believe It's Not Butter" spray on it after the lemon juice, then add the seasonings, & then cook each fillet individually in a foil packet (keeps it moist & saves clean up!). It is a wonderful recipe that made a salmon lover out of me! :)

Mock Lobster

This was really good! I've been in a bit of a "chicken slump" lately, because we eat it a lot & I'm getting sick of the same boring recipes. I ended up marinating this for a lot longer than I intended (48 hours), but I think that helped make it really moist & yummy. The only complaint I would have is that it was a little salty, even using reduced-sodium soy sauce. Then again, maybe that's because I marinated it for so long :). And I'm not a big fan of butter, but I tried it dipped in melted Smart Balance butter & it was delicious! Thanks for a fresh new recipe to get me out of my slump! :)

Cream Cheese Squares

One word: delicious! This was such a simple dessert to make too. I whipped it up before I went to Bible study tonight & just stuck it in the fridge for an hour or so(which I highly recommend, b/c while it tastes wonderful warm or cold, it is MUCH easier to cut when chilled & set!) Everyone was really impressed & ate all of them! I definitely don't think you need all of the butter called for...I did as another reviewer suggested & just brushed some over the top. I also didn't use all of the cinnamon/sugar mixture, just sprinkled enough to lightly coat the top. I will definitely be making this treat again & again!

Lower Fat Banana Bread II

Very good recipe! I would definitely recommend adding some cinnamon (about 1 tsp.), b/c I think it would be a bit bland without it. Otherwise, this definitely satisfied my craving for banana bread (& I feel a lot less guilty eating it!:))

Bread Pudding II

I had never made or even tasted bread pudding, but a co-worker of mine said that she loved it growing up, so I thought it was worth a try. I chose this recipe because of all the great reviews & I already had all the ingredients in the house. I was very impressed! Very yummy...reminded me of French Toast. I did add an extra slice of bread, but I think I would like it better with even more (it seemed a little mushy). But hey, I really have nothing to compare it to! Overall, great, easy recipe.

Baked Chicken Nuggets

Yum! This recipe is great. I made a few small changes...dipped in milk instead of butter, left out the thyme (didn't have any), added a little garlic powder, & used a little less Parmesan cheese. I dipped them in homemade BBQ sauce & they were delicious! My husband didn't even dip his in anything & he loved them :). I definitely recommend the trick of cooking them on a wire rack, because I did mine like that & they were perfectly crispy!

Garlic Chicken
