Spanish Rice II

Burrito Pie

I used 1lb of meat but left everything to same. I substituted ground turkey since that is what I had. I also used whole pinto and black beans to make up to lack of extra meat. Everyone loved this dish and it will prob be a regular in my fall/winter dinner rotation.

The Right Choice Chocolate Chip Cookies

I did not have coconut extract so I added vanilla instead. I did use Almond Joy chocolate pieces to make up for the lack of coconut extract though. These cookies were ok. I had to add more flour after the first batch backed up flat and greasy as well as turning the oven temp down to 350. Not a chewy middle cookie. I love trying new recipes so I thank you for sharing.

Avocado-Mango Salsa

Used 1/4 of a small onion, omitted salt, and used lime juice instead of vinegar. I also added a whole jalapeno for a little heat. This was great. I mixed everything together other than the avocado and let it sit in the fridge for 8 hours. Right before I was going to serve I added the avocado. This recipe was a hit at the party. TFS

These cookies are edible, but I think they are not something I will ever make again. Though I think kids would enjoy them. I used strawberry jello and the flavor had a mildly fruity taste.

Baked Macaroni and Cheese III

I halved the package of pasta but kept everything else the same. I am glad I did because reviewers said it was dry with the whole amount of macaroni. I used a Tarragon Cheddar and a Lionza Swiss from Fiscalani cheese. I baked mine covered for 30 mins and topped with bread crumbs and baked an additional 10 mins. This was really good and I will make again.

Cinnamon Krisp

Instead of rice cereal I used Cinnamon Burst Cheerios and omitted the cinnamon. Also omitted nuts. These were a nice change of pace from the usual krispie treats. TFS

Mushroom Barley Soup

Baked Omelet

I love baked omelets. They are so easy and adaptive and everyone can eat at the same time. I used Egg Beaters in place of eggs, added mushrooms and left over baked potatoes sliced up in place of ham since I didn't have any. Served with salsa and toast and this is healthy and yummy. Thanks for sharing.

Sour Cream Cookies II

I only thing I changed about this recipe was I used whole wheat flour, didn't use pecans or raisins. But I did use different mix ins. I added some oatmeal, chocolate chips, and peanut butter chips to half the batch and cinnamon chips to the other half. These cookies were cake like and I found them to be more than sweet enough plain. This is a great base recipe for those whole like cake cookies. These stay super moist.

Portuguese Kale Soup

I used beef and chicken base instead of beef soup bones to make this recipe easier. Instead of white pea beans (small navy beans) I used red kidney beans. I also used portuguese sausage (linguica) instead of chorizo (personal preference) that I pan seared before adding to the soup base, in the sausage fat I added some onions and garlic, then reduced with red wine. Other that that recipe was as directed. This was really hardy soup that went well with day old french bread. Thanks for sharing.

Baked Omelet Squares

I kind of made this recipe my own in the sense that I used egg beaters in place of eggs and left out a few things we didn't like. But over all this was a great way to make omelets for those busy mornings. Thanks so much for sharing!

Slow Cooker Chili

I used one can of chili beans in sauce, can of Rotel, can of tomato sauce, and some kidney beans I soaked over night. I like my chili thicker so I just added some water so it wouldn't dry out while I left it in the slow cooker for 6 hours. I found mine to be just fine for an easy night. Served with corn bread and it was a hearty meal. Thanks for sharing.

Broiled Tilapia Parmesan

This recipe is similar to a halibut recipe that I make. I omitted celery salt since I didnt have any but other than that I followed recipe. Baked at 375 for 15 minutes. Perfect.

Cowboy Oatmeal Cookies

My cookies spread to much and seemed oily. I did not care for the butter and oil combo. I had to add more flour to make them less greasy. But, I just feel like its missing something. I added chocolate chips and butterscotch chips to my cookies. It was fun to try something new and they were good, just not great. Thanks for sharing
