Tofu and Veggies in Peanut Sauce

A very easy dish to prepare. I substituted and used canola oil and honey. Also pan-fried the tofu in advance with some chopped onions and added garlic in the last minute or so. The family liked this dish a lot!

Cheesy Ham and Hash Brown Casserole

A great breakfast dish. I prepared the dish the night before and just tossed it in the oven in the morning. I used only half the sour cream, 12 oz of cheddar cheese, cubed thick cut Black Forest Ham, and frozen O'Brien cubed potatoes that contained peppers and onions. I think next time I could go with 8 oz of cheddar for less cheesiness and residual oil. A simple recipe that tasted great.
