Ranch Dressing II

Fantastic! Doubled all the herbs and spices, used 1/2 cup mayo, 1/2 cup lite sour cream, and 1/2 cup fat-free buttermilk. Added a bit more buttermilk to thin for salad dressing. Absolutely delicious!

Easy Indian Style Okra

Very good. I used frozen okra, added a little leftover tomato sauce, added 1 tsp of garam masala to the spice mix, and cooked for around 15 minutes. Came out perfect.

Apple Pie by Grandma Ople

Amazing! I made one pie with the lattice on top and had enough pie crust left to make four muffin-pan tarts. Friends thought I had bought them rather than made them. Note: Don't use Sugar in the Raw in place of the white sugar; it does not caramelize well.

Baked Corn

Very good! I used half the butter, 1.5 times the sour cream, a splash or two of buttermilk, and fresh corn instead of canned. It was very yummy, but I think I would add more milk next time, as it was more bread-like, and I was hoping for more of a spoonbread.

Fantastic! I followed Firefly's advice for mixing the dough, and these came out perfect. After the initial baking, I toasted each side for 10 minutes to make them extra crispy.

Perfect Pumpkin Pie

I used fresh pumpkin from a medium sugar pumpkin, which came to about 4 cups of pumpkin. So I doubled the recipe to match, except for the condensed milk - one can of the fat-free variety was sweet enough. Two cans would've been overkill/diabetes-inducing. I also used homemade pie crust, which I pre-baked prior to use. Great! Also note that 1 tsp of pumpkin pie spice is 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg. So using pumpkin pie spice instead of the recommended spices is really no change; they're the same spices.

Summer Salad with Cumin-Crusted Salmon

I was really impressed with this recipe, both the taste and the quick preparation time. I used half the oil, skipped the feta and cilantro, and replaced pine nuts with sunflower seeds. Fantastic!

Basic Beef Stock

Made it as read except I roasted the bones for an hour before preparing the stock and added extra potato instead of parsnip. There was a ton of fat that congealed on the top when I let it cool, which I skimmed off. So don't leave out that step.

Overnight Cinnamon Rolls I

Very good! I added chopped pecans, pressed the filling into the dough with my fingers before rolling to keep it from fallin gout, and used melted butter instead of corn syrup for the icing.

Apple Bundt Cake

I used 3 cups of Granny Smith apples, 1.5 tsp of cinnamon instead of 1 tsp, and I used only 1 cup of brown sugar in place of the 2 cups of white, which was plenty sweet for me. I folded the apples and nuts in with the batter rather than layering them. I drizzled the cake with the caramel sauce recommended by another reviewer (1/2 cup butter, 1/2 cup brown sugar and 2 teaspoons milk, heated to a boil for 2 minutes). Delicious!

Lentils and Rice with Fried Onions (Mujadarrah)

This was really amazing, so simple, and so nutritious. I used chicken broth instead of water, used 2 large onions rather than 1, and used Basmati rice. I sprinkled the onions with 1/2 tsp of cinnamon while they were cooking, as reviewers suggested, and added 1/2 tsp each of cumin and garam masala to the lentil/rice mixture when adding the rice in. So good.

Italian Breaded Pork Chops

This was fantastic! I made it as read, except I would reduce the egg/milk and bread crumb/cheese mixture next time; there was way too much of it that just went to waste. You could probably cut it in half. Other than that, delicious! I served with applesauce but maybe a side of pasta with tomato sauce would've been better, or you could just top the chops with a nice marinara.
