No-Bake Chocolate Cookies

My Mom made these when I was growing up and I just loved them:) I followed another reviewers advice and use only 1.5 cups of sugar, 2 1/2 cups coconut and 2 cups of oats. Boil for 2 mins and they come out perfect! I also find that whisking the cocoa into the milk mixture initially helps the process along:)

Beef and Irish Stout Stew

Loved this! Made a few changes based on what I had on hand... used Sam Adams ale vs stout and the flavor was still great! Used chicken stock vs beef, added a stalk of chopped celery and used several sprigs of fresh thyme. I allso ommitted the cayenne but used a generous amount of salt & pepper. I served over mashed potatoes and it was great! Enjoy:)

Lemon Blueberry Drop Scones

I followed the recipe but used vanilla yoghurt vs lemon, added the juice of one lemon and doubled the lemon zest & blueberries. I personally found these to be rather flat tasting but ok. Don't plan on making them again...

Cracker Candy

I've made this in the past with white sugar but opted to try it with brown, as suggested by another post- much better! I also use the full cup of sugar, melt with the butter and boil for exactly 3 mins. Pour over the Saltines and pop in the oven. CAUTION: Don't let the toffee mixture sit on the crackers before popping in the oven- this will create a soft candy versus a crunchy candy:) I've sprinkled the final product with Heath bits but my all time favorite is chopped, toasted pecans:)
