Lemon Honey Glazed Carrots

The flavor was very good, but the sauce never formed a glaze or thickened at all. I just spooned it over a bed of rice.

Slow Cooker Enchiladas

It was really good, but turned out to be more of a stew than a casserole. I did double the recipe since there are 8 people in my family. I should have used 2 crockpots when I doubled it. However, even doubling the recipe, there were no leftovers.

Cabbage Patch Stew

Blackened Chicken Pasta

The base flavour was good, but it was way too spicy for my family. I followed the recipe exactly and 4 of my kids were in tears from the spice. Even after we added sour cream to their bowls, it was still a struggle to get them to eat it. I'm giving 3 stars because it's a good starting point. Next time I make it, I will cut the spices in half.

Chili Con Queso Dip I

This was very mild, almost bland. It also didn't resemble queso dip very well. It was very chunky and oniony. You couldn't taste the chili sauce at all. If I try it again I will be adding a lot more seasoning. As is, the kids didn't like it and the spouse tolerated it.

Jammin' Tarheel Chili

This is easy and the whole family likes it. I do cheat a little bit though. I use my food processor on the celery, onions and garlic until they're just short of pureed. I find the flavours mix really well and it saves me a lot of time since I make a triple batch.

Homemade Crispy Seasoned French Fries

everyone really liked these fries, but they took a long time to make, 8-10 minutes per skillet-full and you can't put too many in to cook at one time or they end up stuck together. I was at the stove for almost 2 hours to make enough for my family of 13. I also discovered that it took more than double the amount of water the recipe called for and don't forget to pat the potatoes dry before dipping or the batter just slides right off. I will make these again if I can figure out a way to speed up the process.
