Best Ever Blueberry Cobbler

Yum - good! My changes were 4 cups blueberries, 4 tablespoons sugar, limeaid (did not have orange juice), and generous but not measured amount of cinnamon to flour. Might possibly add a bit of cornstarch to the berries next time.

Broccoli with Garlic Butter and Cashews

Yummy! I used 1/2 recipe of the sauce for about 1/2 pound broccoli. I sauted the garlic in the butter (less than called for, about 1 tablespoon), mixed the soy sauce (lower sodium), vinegar, and brown sugar together in a very small bowl with maybe 1/2 teaspoon of corn starch, then added the contents of the bowl to the butter/garlic and cooked until thickened. Cashews were raw unsalted toasted briefly on a pan in my toaster oven. This will be a regular here!

Mexican Rice III

Good flavor. Sauted the onion and rice together, added garlic, 1/4 teaspoon whole cumin seeds and an unmeasured small shake of powdered cumin before adding broth, Knorr's vegetable bullion 1 cube, in 3/4 cup hot water instead of any chicken broth (this was for 1/2 the recipe as written or 3 serving). I chopped the cilantro finely and added it when fluffing the rice after removing from heat and letting sit for 10 minutes.

Buttermilk Corn Bread

nice tender cornbread even after 5 days. It would have been gone by then if we had not left the remains of it home while out of town. I baked at 400 in an 8 x 8 pan, did watch carefully to not burn.

Zesty Red Potatoes

Yummy. Used full amount of butter and ended up pouring a lot out after baking. Mixed in some Mrs. Dash onion/herb with the butter and salt. Less onion than called for. Cheddar cheese on top when done and placed under broiler for a couple of minutes. Will probably try something like 2/3 of a 1/2-cup stick of butter next time.

Homesteader Cornbread

What did I do wrong? Halved the recipe correctly, used more sugar (almost 1/2 cup for the halved recipe). Beat 5 minutes and baked immediately. It came out bumpy, overly smooth looking, had to take out early as it was about to burn.

Potato Latkes I

Really really good. I used a bit more than 1/2 cup very finely chopped onion and less than a teaspoon of salt, and they were still a bit salty. I also used 2 large eggs which was plenty. I just squeezed the water out of the shredded potatoes by handfuls before adding the other ingredients.

Vanilla Crepes

Yummy! Changed to 4 servings, used the whole egg. The milk was 1/2 evap milk to 1/2 water. Filled with cottage cheese blended with frozen blackberries and a bit of sugar.

Goat Cheese Stuffed Tomatoes

Really good! As stated by others, no way it makes 4 large tomatoes - mine made 3 small ones. Served with some Rice A Roni whole grain Spanish rice, and I do think the rice would be good mixed and stuffed with the goat cheese. Also I would add some salt to the goat cheese next time as stated. I thought it would be salty enough by itself, but it needed a bit more.

Delicious Black Bean Burritos

I considered this a base recipe and loved it with the additions of 1 tsp cumin, 1 tsp chili powder, and a couple of fresh garden tomatoes, peeled and chopped added just before the beans. Did not measure salt exactly but it was more than called for. I can see where corn or mexican rice would have been nice additions, but I didn't have any.

Mama Bear's Porridge

Really good. Note that I changed the serving size to 1, and then used 1 egg, 1 tablespoon soy milk powder, and put on a bit (unmeasured) of canned milk after cooking. Probably less honey than it called for too. Delicious and I will definitely make again.

Oatmeal Cookie Mix II

Really good. Added a bag of semi-sweet chocolate chips and quite a bit of chopped walnuts - at least 3/4 cup? 350 was better for my oven. Might add more spices next time.
