Strawberry Cake from Scratch

This had the best strawberry flavor. I baked it a little longer than the instructions (about 10 mins), just because my oven always seems to underbake cakes. Think I might have overdid it a bit because it was a little dry, but still very good. I also made a lot of very sweet cream cheese frosting to frost it with. The frosting overpowered the cake a bit. Might do it with a little less frosting next time.

Chicken Scampi II

Quick to make and delicious too! Substituted the dried seasonings with fresh herbs I had on hand (basil, parsley and cilantro). Also stirred in some cooked angel hair pasta at the end and cooked for a couple of extra minutes to warm the pasta. The pasta soaked up all the yummy sauce giving it a great flavor. Will definitely be making this again often.

Rhubarb and Strawberry Pie

How can you go wrong. Two of my favorites (strawberry and rhubarb) and in a pie! Read the other reviewers comments about it being a bit runny, so also stirred in a little tapicoa in the fruit mixture, and think that helped thicken it up a bit. Also let it sit overnight, and had it the next day for breakfast. Great with some fresh coffee!

Two Pigs Pasta

Made with leftovers I happened to have around the house. Turned out so good! Thought of the name because it used both pork and bacon, but husband thought I named it because of the two of us pigs eating it all up. Ha!

Chicken Noodle Casserole

This was really good. It was more like a creamy soup than a casserole. And the flavor was exactly like homemade chicken pot pie - with noodles instead of in a pie crust. It is also just about as much work to make as a homemade pot pie, with all the steps involved. Takes way more time to make than the instructions say, so not a recipe if you are looking for something quick and easy after work. It is a good recipe when you have some time to spend in the kitchen.

Cherry Pie III

Made my own crust recipe, but followed the filling recipe exactly. Used frozen dark bing cherries from Door County Wisconsin. Turned out great! Made it for Father's day and got good reviews.

Banana Crumb Muffins

Wow! These were so good. Did them in greased muffin tins without paper liners, and the turned out a perfect golden color. The topping gave it a great sweet crunch. This is definitely a keeper.

Fresh Cherry Crisp

Grandma's Green Bean Casserole

My new favorite green bean casserole. Have made it a couple of times now. Love it because it doesn't use mushrooms (I'm not a fan). Also easy to make the night before, stick in fridge, and pop in oven when you are ready to make. Perfect for when you are having company.

This was awesome! I'd give it more stars if I could. So easy to make and so delicious. I did a Cinco De Mayo/Mothers Day fiesta with the in-laws, and got rave reviews on this one! So much better than regular old hamburger tacos!

Jalapeno Chicken II

This was really good. Have a ton of jalapenos in the garden, and this is an excellent way to have them. It's like a jalapeno popper inside grilled chicken. Served over spaghetti and homemade sauce, similar to chicken parmesean, but with a kick!

The Best Lemon Bars

These are very good and much easier than the recipe I normally make from the Better Homes & Gardens plaid cookbook. I liked that it used regular sugar instead of powdered sugar too, since I didn't have any powdered sugar on hand.
