Shrimp Tacos

I'd give 10 stars if I could! I did modify the recipe a bit though, making it more of a savory than sweet dish. I didn't have mango, so just left it out. Replaced the red onion with shallot. And cooked the shrimp in butter, garlic and a little lemon juice, leaving out the honey. Delicious!

Succulent Roast Chicken

Great flavor combination. The lemon, rosemary and garlic complement each other well. I only had skinless chicken breasts on hand, so just put them on top the sliced lemon, spread the chopped garlic, rosemary, thyme, and olive oil mixture over the chicken and baked it for about 45 - 50 minutes. Probably should have baked them for a little less time. 40 minutes probably would have been about right for two chicken breasts that were almost 2 pounds. Be sure to scoop up some of the juices from the pan and drizzle on top the chicken before serving, for extra flavor and moisture (if you over cook your chicken like I did). Will definitely use this flavor combination again.

Andy's Spicy Green Chile Pork

This was very good. Made it with homemade Green Salsa, another recipe on this site. The leftover freeze well and have been enjoying the leftovers as a quick dinner after work. Served on tortillas taco style.

Pork Tenderloin with Pineapple Salsa

This was very delicious and pretty on the plate with the yellow pineapple and red peppers. I just wish I would have followed the instructions on foil lining the baking pan first. Baked in a glass baking dish without foil, and am still soaking and scraping my baking dish two days later :)

Cherry Ice Cream

This was fantastic! Like some of the other reviewers, I couldn't find cherry concentrate so I used cherry syrup instead. Also added in a cup of semi-sweet chocolate chips the last five minutes it was in the ice cream maker.

Mini Apple Pie

This was delicious and the perfect portion for two people. Apples were the perfect consistency. Was worried they would be mushy cooking ahead of time on the stove, then baking in the oven; but they turned out perfect. Added a little dried tapicoa to the filling just before pouring into pie crust like I always do to my apple pies just to make sure the filling wasn't too soupy. Served with vanilla ice cream and caramel sauce. Will definitely be making this again!

Juicy Roasted Chicken

This is by far the best roasted chicken I've made. For the first time, I was able to roast a chicken without setting off the smoke detector. I also added fresh garlic cloves under the skin, sliced onions in the cavity, and rubbed rosemary on the outside. Yum!

Stir-Fry Pork with Ginger

This was so easy and so good. Was looking for a quick weeknight dinner to use up some leftover pork tenderloin, and this hit the spot. I also added in some fresh chopped garlic with the ginger, and substituted a regular white wine for the rice wine because that is what I had.

Mississippi Mud Cake II

This is really more like a brownie than a cake. It is pretty dense, really chewy... and really fabulous! I'd definitely make it again. I made this recipe exactly as noted, except I also ground up some Oreos and added on top the icing, to give the "mud" cake a "dirt" topping. I also added some gummy worms on top just for fun.

Pork Medallions with Sauteed Apples

This was very good. Made it for my husband and his grandfather and got lots of compliments. The only thing I did differently was to cook the pork in a pan on the stove top, rather than broil.

Sweet Restaurant Slaw

This is very good. I can see why it got so many 5-star reviews. I didn't think it was too sweet, but then I love sweet dishes. It was the perfect way to use up some cabbage from the garden. The only change I made was to use green onion instead of regular onion.

Easy Fruit Cobbler

This was very good. Was looking for an easy cobbler where I didn't have to cook the peaches ahead of time before baking it. This was it. It was interesting in how it turned out at the end. I layered all the peaches on top, but when it baked, they sank to the bottom and the crust ended up all golden brown, and delicious on top, just as if I had put it on top at the beginning. Very tasty.

Sweet and Sour Sauce I

Downeast Maine Pumpkin Bread

So flavorful and moist. It also freezes really well. It was still as flavorful and moist after I defrosted it from the freezer. Just slice and freeze, then take out of the freezer and warm in the microwave for 30 seconds.

Apple Puff Pancake

This was a lot more dense than the traditional puffed apple pancake recipe I usually make from a recipe from my husband's grandmother. Not as good as grandma's recipe, but still good. It makes a pretty big pan and is extremely filling. Like some of the other reviewers mentioned, I also mixed the brown sugar into the apples at the bottom of the pan which gave it a nice caramel coating. Make sure you are hungry when you make it!

Marinated Sirloin Steaks

This was very good. The honey gave it a nice sweet favor. Also used red onion instead of green onion because that was the only kind of onion I had on hand. Since it was winter, my husband just baked the steaks in the marinade in the oven. Turned out great!

Seafood Lasagna II

This was awesome. The recipe is almost exactly the same as Aunty Pasto's Seafood Lasagna, also on this site, with the exception this one does not include mushrooms, so I used this one as am not a mushroom fan. The only variations I made were to use ricotta cheese instead of cottage cheese and seafood seasoning instead of salt and pepper. Will definitely make again.

Apple Breakfast Bread

This was very good. I made it while on vacation and didn't have any cooking oil on hand, which i usually use when making quick bread. I did have butter, sugar, flour and apples from Wisconsin though. And this bread was the perfect treat! I made it exactly as directed, except omitting the cloves because I didn't have any. I didn't find it dry at all. It was nice and moist. I used Cortland apples and cut them chunky. I also cut the recipe in half to make two small mini loaves. Would definitely make again.

Honey Mustard Dressing II

I have been looking for a good homemade salad dressing recipe forever. When I saw this one had so many rave reviews, I decided to give this one a try. I am so glad I did. It is exactly the recipe I've been looking for. I used Miracle Whip instead of mayonnaise, but other than that, I made it exactly as directed. It is the perfect balance of sweet creaminess and tangy zip!
