Pecan French Toast

This was awesome! I even made it with homemade sourdough bread, which made it even better. Loved the flavor of the orange and pecans. With the thick slices of homemade bread, I cooked it a little longer than the directions - just until it was crispy and no longer mushy. This is definitely a keeper.

Garlic Chicken

Baked Brunch Omelet

Watch the conversions on this if you want to cut it in half. The full recipe (12 servings) calls fo 1/2 a loaf of bread, but when you cut it in half to 6 servings it calls for more bread (1 loaf). I didn't realize this until I had poured the egg mixture into the bread mixture, and thought it seemed like I had way more bread than egg. Then I went back to check the recipe conversion and realized what had happened. I was able to add more egg and milk to compensate before putting in the oven, but I had already put in an 8x8 dish since I had intended to cut in half. So it ended up thicker than it would have been had I used a 9x13 dish. I also used leftover salmon from dinner the night before instead of ham and used homemade wheat bread instead of white bread. The flavor with the salmon, egg and cheese was great.

Holiday Chicken Salad

Took a quick taste before putting in the fridge and the flavors of this are fantastic! I added some dried tart cherries, as I did not have enough dried cranberries, and it still tasted great. Great mix of sweet and savory with fruit, nuts and veggies, and also had a nice crunch. Can't wait to try it with my homemade wheat bread!

Tomato-Cream Sauce for Pasta

Easy Chicken Cacciatore

Was inspired by a recent episode of Bobby Flay's Throwdown show where he challenged a firehouse cook to make chicken cacciatore. I had never made this before, and this particular recipe is extremly easy and tasy. Served it with dry wide egg noodles. We had absolutely no leftovers!

This was delicious. Had some canned peaches I wanted to use up, and this was a great way to do it. Very sweet and flavorful. Even better with a scoop of vanilla ice cream.

Baked Pork Chops I

This is my new favorite pork chop recipe. I am usually not a fan of breaded meats, but this was awesome. Have made it several times now. It is very easy and pretty-much fail proof. Have made it with both cream of mushroom and cream of celery soups. It is much more flavorful with the cream of mushroom soup.

Rich and Creamy Tomato Basil Soup

This was just OK. I thought it would be thicker. I think I either used too much cream or not enough tomatoes. Felt like I was drinking tomato milk. I also had kind of a mess when trying to puree in the blender - but that was my fault, not the recipe's :)

This was awesome! Couldn't stop eating it. I had all the ingredients on hand. Crushed some bran flakes from Raisin Bran for the bran part, and used the raisins for the fruit part. Also had some dried cranberries. The perfect mix of salty and sweet!

Grilled Rib Eye Steaks

This is possibly the best steak I've ever had. I usually use steak sauce or BBQ, but as other reviews of this recipe indicated - no other sauces are needed. So juicy and flavorful. And easy to make with ingredients I already had on hand. Dropped it in the marinade before going to work and had for dinner that evening. Served with corn on the cob and garlic bread.

Cherry Ice Cream

This was fantastic! Like some of the other reviewers, I couldn't find cherry concentrate so I used cherry syrup instead. Also added in a cup of semi-sweet chocolate chips the last five minutes it was in the ice cream maker.

Mini Apple Pie

This was delicious and the perfect portion for two people. Apples were the perfect consistency. Was worried they would be mushy cooking ahead of time on the stove, then baking in the oven; but they turned out perfect. Added a little dried tapicoa to the filling just before pouring into pie crust like I always do to my apple pies just to make sure the filling wasn't too soupy. Served with vanilla ice cream and caramel sauce. Will definitely be making this again!

Apple-Cinnamon Baked French Toast

Had some apples I wanted to use up and this was a good way to do it. Was easy to make. Liked that you could make it the night before and just pop in the oven. My husband was worried it would be too mushy soaking it overnight, but once I served it he thought it was just right.

Apple Crisp II

This is so good. I cut the recipe in half, added a 1/2 cup of chopped walnuts to the crumb mixture, and baked in a glass pie dish. The nuts gave it a nice flavor and added crunch. Served with vanilla ice cream.
