Maple-Garlic Marinated Pork Tenderloin

This was delicious. I made it for pork chops instead of a tenderloin. I also forgot to warm the sauce in time for basting (the chops were already on the grill), so I boiled the extra sauce, thickened it with a little flour and cornstarch to make a "gravy" to serve with it instead. No leftovers!

Apple Rhubarb Crumble

Very good! I followed another reviewer's suggestion and added some oats to the crust as well (the same amount of oats as flour). I also cut the recipe in half since I only had one apple and a cup and half of rhubarb. Cooked it in a glass pie baking dish and had it for breakfast the next day!

Chicken Stir-Fry

Very flexible recipe. I substituted the marinade seasonings with a jar of pre-made teriyaki marinade. Cooked the chicken breasts whole in some olive oil (did not measure) and continued to baste with extra marinade. The only veggies I had on hand were carrots, so I used two cups thinly sliced carrots. Sauteed the carrots in more oil after removing the chicken. Sliced up the chicken and returned to the pan with the carrots. Continued with water and boullion step, plus added 3 tbls of cornstarch at the end to thicken (instead of coating the chicken with the cornstarch at the beginning). Even with all the changes, it was excellent.

Unbelievable Chicken

I only had an hour to marinade, and it was still very juicy and tasty. Can't wait to try again when I have longer to marinade to make the flavors even stronger.

Chocolate Chip Banana Muffins

Salmon Mac and Cheese

Very great flavor but a little drier than I thought it would be. Next time I would double the milk and cheese part. I substituted the canned salmon with flaked leftover salmon from the Baked Dijon Salmon recipe, also in this site, which gave it added flavor. Also used dried seasoned stuffing mix instead of bread crumbs for the topping.

Banana Pancakes I

Great banana flavor. Served with maple syrup and toasted pecans. The pancakes really soaked up the syrup. They brown pretty quickly while still slightly mushy in the middle. Warmed them in the oven as I made the rest of the batch, which I think helped the middles cook through a little better.

Irresistible Irish Soda Bread

This was excellent! So easy to make, and so delicious. It had a nice crunchy crust on the outside and was soft and moist on the inside. The texture reminded me a bit of cornbread. Was perfect with the stew I made for St Patrick's day. Will definitely make again.

Special Irish Beef Stew

This was an excellent creamy stew. Made it a day ahead of time and served it for St. Patrick's day with the Irresistible Irish Soda Bread, also from this site. I used Smithwick's Irish Ale for the beer and about 6 small red potatoes instead of 2 large baking potatoes. The husband had two huge bowls!

Heavenly Potatoes and Ham

This was so wonderful. Rich and creamy. I cut the recipe in half and made in an 8x8 dish. Used a little more sour cream than called for in the recipe and topped with seasoned dry stuffing crumbs instead of bread. This is definitely company worthy and would definitely make again.

Split Pea and Ham Soup I

Pretty good. Thickens up pretty fast though. Had to keep adding water to thin it out to be more like soup, and with all the added water ended up being more like 6-8 servings instead of 4.

Chicken Tikka Masala

This was incredible. I took the advice of the other reviewers and cut back on the salt. I actually cut the salt called for by 1/3. Followed all of the other instructions exactly and it turned out perfectly! We had absolutely no leftovers. Will definitely make again!

Microwave Apple Crisp

Wanted something quick and easy for breakfast before work. This worked great! Scaled the recipe down to one serving and reduced cooking time to 3 mins. Could probably reduced cooking time a little bit more, as apples were a little mushy. But still tasted great! Love the tart taste of the Granny Smith with the sweet brown sugar topping.

BBQ Chicken Pizza I

The sauce was excellent. I started with a brown sugar hickory BBQ sauce, so I only put in 1/4 cup brown sugar. Was very good. My only complaint is that it needed a little less sauce and a little more cheese. Next time I'd mix in about an additional cup of mozarella, as the gouda didn't melt very well.
