Slow-Cooker Chicken Tortilla Soup

Yum! This was so good. Didn't have corn on hand, so left it out, but still was awesome anyway. Was having tile floor grout repaired while it was cooking in the slow cooker, and the repairman even asked me for my recipe it smelled so good... Tasted good too!

Shrimp Linguine

This was very good. Only had one fresh tomato on hand, so had to use a can of tomatoes that I drained. The flavors were great, but the sauce was a little soupy (probably from the canned tomato). Would cook the cream sauce a little longer next time to get it to thicken up before adding the shrimp, to make for a creamier sauce.

Strawnana Bread

Cut the recipe in half and used it to make muffins. Made 12 muffins. To prepare muffins, mixed ingredients by hand so not to over mix, left the strawberry and banana mixture a little chunky when mashing, filled muffin liners 3/4 full, and baked for 25 minutes. Made a wonderful muffin with a nice crispy top and great flavor with small chunks of strawberry and banana throughout. Also left out the orange zest, since I didn't have any in the house and many other reviewers commented on the orange flavor being overpowering. Thought it was the perfect mixture of strawberry and banana flavor without it.

Basic Truffles

This was incredible and so versatile. Had some bittersweet chocolate to use up, and this was perfect. Separated into three batches, flavoring one with vanilla, another with peppermint extract, and the third with rum extract. Rolled in various coatings, including powdered sugar, cocoa powder and chocolate sprinkles. All were great. Let thaw at room temperature about 30 mins before serving.

Waffles I

Very easy and quite good. Used one cup all purpose flour and one cup wheat flour (in an effort to use up some of the wheat flour I had on hand). Also served with fresh, homemade strawberry sauce, whipped cream and topped with cinnamon and powdered sugar.

Baked French Toast

This was the best! The caramel sauce on top created a nice crispy crust that was incredible. I agree with another reviewer that is almost more like bread pudding. Will definitely make again.

Braised Balsamic Chicken

This was awesome. Quick, easy and extremely delicious. Made it on a weeknight after a rough day at work, and it was just the pick me up I needed. Used 3 chicken breasts instead of six, so had plenty of extra veggies and tangy sauce to enjoy with the rice. Will definitely be putting this on my regular list of things to make.

Baked Fresh Cherry Pie

This was great! I loved that you didn't have to cook the cherries ahead of time before baking, like with other recipes. The hardest part was just removing the pits. I let the cherries sit in the sugar, etc., while eating supper. Then assembled and popped in oven! I also didn't have enough tapioca, so i mixed in some cornstarch as well, and it turned out great.

Banana Muffins II

Very tasty recipe. Bakes to be nice and golden and chewy. I also added some toast walnuts and chocolate chips. Yum! Next time I might also add cinnamon and vanilla as another reviewer suggested, to kick it up a bit more.

Baked Garlic Parmesan Chicken

Looking for something quick, easy and tasty, then this is it! The crust kept the chicken completely moist and juicy. I used dry seasoned bread crumbs, so the crust was a little drier and crunchy. Next time may try regular bread crumbs. Definitely a keeper.

Blueberry French Toast

Yum! I followed the directions exactly and it turned out perfectly. It was not mushy at all. It was nice and crispy on top, and the cream cheese and blueberry sauce was incredible. I just topped with some powdered sugar, cinnamon and homemade whipped cream before serving.

Slow Cooker Chicken and Dumplings

This was so easy to make and very tasty. It was a little thicker than traditional chicken and dumplings though and a little salty. Next time I would use less cream soup and more chicken broth. Also, follow the other reviewers comments to cook the biscuits longer than 30 minutes. I let them cook for over an hour.

Seafood Lasagna II

This was awesome. The recipe is almost exactly the same as Aunty Pasto's Seafood Lasagna, also on this site, with the exception this one does not include mushrooms, so I used this one as am not a mushroom fan. The only variations I made were to use ricotta cheese instead of cottage cheese and seafood seasoning instead of salt and pepper. Will definitely make again.

Fabulous Cilantro Pesto

I'd give this 10 stars! I didn't make the pasta. Only made the pesto and left out the nuts. Then I mixed the pesto with some ricotta cheese and used to make crostini. Just spread some olive oil on some slices of French bread, toast under the broiler, top with slices of tomato, then ricotta and cilantro pesto mixture, then sprinkle parmesean cheese over all and broil for 1 minute. Yum!

Todd's Famous Blueberry Pancakes

I thought these were great. My pancakes usually turn out thin and flat. These puffed up nicely. Only thing I'd do different next time is to give the batter one more stir before pouring out on the griddle. My blueberries sank to the bottom, so my first couple of pancakes had very few berries and my last couple had tons.

So easy and so good. Read the other reviewers comments about being a little greasy, so added a little cornstarch at the end to thicken the sauce a bit and absorb some of the grease.

Almond Rhubarb Coffee Cake

Very tasty. I didn't have almonds, so made it without. I'd also cut the recipe in half and baked in a pie plate. I might bake a little longer next time. Was still a little mushy in the middle even after testing with a toothpick for doneness.

Marinated Pork Chops

This was so good. I followed the recipe exactly, except for cutting in half, and it turned out perfectly. Can see why it got so many high reviews. Used some thick Iowa pork chops and served with grilled asparagus. Yum!

Maple-Garlic Marinated Pork Tenderloin

This was delicious. I made it for pork chops instead of a tenderloin. I also forgot to warm the sauce in time for basting (the chops were already on the grill), so I boiled the extra sauce, thickened it with a little flour and cornstarch to make a "gravy" to serve with it instead. No leftovers!
