Cherry Pie III

Made my own crust recipe, but followed the filling recipe exactly. Used frozen dark bing cherries from Door County Wisconsin. Turned out great! Made it for Father's day and got good reviews.

Rhubarb and Strawberry Pie

How can you go wrong. Two of my favorites (strawberry and rhubarb) and in a pie! Read the other reviewers comments about it being a bit runny, so also stirred in a little tapicoa in the fruit mixture, and think that helped thicken it up a bit. Also let it sit overnight, and had it the next day for breakfast. Great with some fresh coffee!

Herb, Garlic and Bacon Pork Loin

Chicken Scampi II

Quick to make and delicious too! Substituted the dried seasonings with fresh herbs I had on hand (basil, parsley and cilantro). Also stirred in some cooked angel hair pasta at the end and cooked for a couple of extra minutes to warm the pasta. The pasta soaked up all the yummy sauce giving it a great flavor. Will definitely be making this again often.

Strawberry Cake from Scratch

This had the best strawberry flavor. I baked it a little longer than the instructions (about 10 mins), just because my oven always seems to underbake cakes. Think I might have overdid it a bit because it was a little dry, but still very good. I also made a lot of very sweet cream cheese frosting to frost it with. The frosting overpowered the cake a bit. Might do it with a little less frosting next time.

This was awesome! I'd give it more stars if I could. So easy to make and so delicious. I did a Cinco De Mayo/Mothers Day fiesta with the in-laws, and got rave reviews on this one! So much better than regular old hamburger tacos!

Spanish Rice II

Made this for a belated Cinco De Mayo and Mother's Day combo celebration and got rave reviews from the in-laws! Would definitely make again. Made as directed, but it burned a little in the bottom of the pan. I was still waiting for the rest of my menu to finish cooking, so just let this set on the stove a little bit, and the extra time helped to steam the slightly burnt rice off the bottom. Still everyone loved it, and didn't seem to notice :)

Tres Leches (Milk Cake)

The first time I ever had this type of cake and thought it was OK. I didn't make it as the directions state. After reading the reviews, followed the suggestions of others to reduce the milk (I did so by using only about a 1/4 of what was called for) and the sugar in the whipped topping (about 1/2 a cup). So glad I did. Would have been way too soupy with all that milk. Used the extra milk to make the Vanilla Ice Cream III recipe also on this site.

Angel Hair Pasta with Shrimp and Basil

Not too bad. May cook the tomatoes longer next time or cut in half. Had a lot of extra sauce. Also, if you live in the Midwest like I do, and fresh shrimp is hard to come by, and have to use frozen, you could probably skip the first cooking of the shrimp and just warm in the tomato sauce at the end.

Strawberry Bread

Pretty good. Was a little dry, but not too bad. Took it to work and got good reviews. Wonder if I mashed the strawberries up, like you mash bananas when you make banana bread, if that would make it more moist.

Banana Crumb Muffins

Wow! These were so good. Did them in greased muffin tins without paper liners, and the turned out a perfect golden color. The topping gave it a great sweet crunch. This is definitely a keeper.
