Blueberry Zucchini Bread

This was delicious! I cut the sugar down (1 heaping cup) and I replaced all of the oil with applesauce. I meant to toss the blueberries with some flour to prevent the berries from sinking as another reviewer suggested, but forgot--oh, well--there's always next time. Also, I topped it with a streusel topping as others have suggested. The recipe made 2 standard-sized loaves. I'll definitely be making this again!

Cheesy Amish Breakfast Casserole

This was great! It was a hit with the group of friends I invited over for brunch. I used an Italian blend cheese instead of Swiss (I'm not a Swiss fan), and I used 1-1/2 C of Mexican blend cheese since it's what I had on hand. The casserole turned out perfectly; this recipe is a keeper!

Suki's Spinach and Feta Pasta

Very simple and tasty! I doubled the amounts of spinach, onion, and garlic. I happened to have some black olives on hand, so I threw some of those in as well. I'll definitely be keeping this recipe!

Peppermint Marshmallows

These were so easy to make! I omitted the peppermint because I wanted just vanilla flavored marshmallows, and they were delicious! I don't have a candy thermometer, so I followed another reviewer's advice and let the mixture come to a hard boil before starting the timer. The motor of my poor mixer started to overheat about 6 minutes into the beating process, so I shut it off and crossed my fingers that the marshmallows would set--they did! I can't wait to make another batch!

Too Much Chocolate Cake

This cake was a huge hit at a potluck I attended. I substituted unsweetened applesauce for the oil and mini chocolate chips for regular-sized chips, and I topped it with Satiny Chocolate Glaze (from this site). It was so chocolately and moist!

Quick Garlic Aioli

Super easy and definitely garlicky! I used 5 cloves and refrigerated it for 10 hours; it ended up being a little too strong, so next time I'll use 3 large cloves and see how that works.

Eggnog Gingerbread Trifle

Definitely a dish for eggnog lovers! The first time I tried this I doubled the pudding mixture, but it didn't set properly. The next time I used four cups of eggnog with two boxes of pudding mix, and it was a touch too thick...next time I'll try adding a little milk to see how that works. I found Betty Crocker gingerbread cake mix near the brownie mixes. Instead of cranberries I used cake crumbs for garnish, and I added some cinnamon and nutmeg to the whipped cream.

This was a hit with my family and friends! I used 1 cup of sugar, the zest from an entire orange, applesauce instead of oil, and dark chocolate chips. Yum!

Chocolate Zucchini Bread I

This was delicious! The only thing I changed was the amount of sugar--one cup was perfect. I had planned to substitute applesauce for some of the oil, but I didn't have any on hand, so I'll try that next time. I had no trouble with the bread sticking to the pans; I used nonstick pans sprayed with baking spray (the kind with flour in it), and the loaves popped right out.

Brownie In a Mug

These are great for those moments when nothing but a rich, chocolatey brownie will do! I didn't care for the taste the olive oil gave, so I used canola oil instead; I plan to try melted butter one of these days. I reduced the sugar to 3 tablespoons, and it only took 50 seconds in the microwave. I topped it with a little peanut butter--pure bliss!
