Quinoa Black Bean Burgers

Tomato Zucchini Casserole

American Flag Cake

This was definitely a time-consuming endeavor! I haven't decided yet if I'll make it again, but if I do, I'll omit the white chocolate chips--they sank to the bottom of the cake. (I tried mixing them with some flour, since that's worked in other recipes, but it didn't work this time.) There was an awful lot of cake left over after leveling and assembling; it seems like there should be a way to make this recipe without all of the extra cake. I did sprinkle some red and blue crumbs on the top of the cake; the rest of the leftover bits and pieces will be used for a trifle. I frosted the cake with Special Buttercream Frosting from this site. In order to prevent a lot of crumbs from mixing into the frosting, I put the layers cut-side down when assembling the cake. When all was said and done, the cake looked like it was supposed to when it was cut, so at least my hard work paid off!

I decided to try this for a friend's wedding cake, and it was a huge hit! It was really light and creamy, and not too sweet. The only change I made was I used half butter and half shortening. This will be my go-to frosting recipe!

Blueberry Zucchini Bread

This was delicious! I cut the sugar down (1 heaping cup) and I replaced all of the oil with applesauce. I meant to toss the blueberries with some flour to prevent the berries from sinking as another reviewer suggested, but forgot--oh, well--there's always next time. Also, I topped it with a streusel topping as others have suggested. The recipe made 2 standard-sized loaves. I'll definitely be making this again!

Cheesy Amish Breakfast Casserole

This was great! It was a hit with the group of friends I invited over for brunch. I used an Italian blend cheese instead of Swiss (I'm not a Swiss fan), and I used 1-1/2 C of Mexican blend cheese since it's what I had on hand. The casserole turned out perfectly; this recipe is a keeper!

Suki's Spinach and Feta Pasta

Very simple and tasty! I doubled the amounts of spinach, onion, and garlic. I happened to have some black olives on hand, so I threw some of those in as well. I'll definitely be keeping this recipe!

Peppermint Marshmallows

These were so easy to make! I omitted the peppermint because I wanted just vanilla flavored marshmallows, and they were delicious! I don't have a candy thermometer, so I followed another reviewer's advice and let the mixture come to a hard boil before starting the timer. The motor of my poor mixer started to overheat about 6 minutes into the beating process, so I shut it off and crossed my fingers that the marshmallows would set--they did! I can't wait to make another batch!

Too Much Chocolate Cake

This cake was a huge hit at a potluck I attended. I substituted unsweetened applesauce for the oil and mini chocolate chips for regular-sized chips, and I topped it with Satiny Chocolate Glaze (from this site). It was so chocolately and moist!

Quick Garlic Aioli

Super easy and definitely garlicky! I used 5 cloves and refrigerated it for 10 hours; it ended up being a little too strong, so next time I'll use 3 large cloves and see how that works.

Eggnog Gingerbread Trifle

Definitely a dish for eggnog lovers! The first time I tried this I doubled the pudding mixture, but it didn't set properly. The next time I used four cups of eggnog with two boxes of pudding mix, and it was a touch too thick...next time I'll try adding a little milk to see how that works. I found Betty Crocker gingerbread cake mix near the brownie mixes. Instead of cranberries I used cake crumbs for garnish, and I added some cinnamon and nutmeg to the whipped cream.
