Cranberry-Pumpkin Cookies

Reviewed: Nov. 24, 2010
I just made these for a kid-friendly Thanksgiving dessert, and they are fantastic! I omitted the walnuts and added an orange juice and powder sugar glaze over the tops. So far, my parents and I haven't been able to stop nibbling on them, so they should go well with dinner!

Sour Cream Sugar Cookies I

Reviewed: Dec. 16, 2009
These are the best sugar cookies I have ever made! I will probably never use another recipe. The only thing I did differently was to add a 1/2 tsp. of almond extract. The cookies bake up light and fluffy and they held their cut-out shape really well. I made them a little thick and they were perfect. The icing is easy to work with as well. Definitely a keeper!

Cocoa Oatmeal Cookies

Reviewed: Oct. 25, 2009
Alright, but it seems like they have too much butter. They came out a little greasy. I did add a lot of coconut to them-- double yummyness! Highly recommended.

Spinach Lentil Soup

Reviewed: Oct. 18, 2009
Absolutely delicious! I took a heavy hand with the cayenne, but the heat was wonderful on a cool day. Will use this one again, perhaps trying chard instead of spinach.

Peach Coffee Cake II

Reviewed: Sep. 11, 2009
Like a lot of other people, I was nervous that there was not enough cake batter, but it turned out great! I bought some bumped and bruised peaches at the farmer's market and tossed them in a little sugar, cinnamon, and nutmeg before I added them to the cake. I also added a about 2 tsp of cinnamon to the batter to perk it up (I'm a cinnamon addict). It also took a lot longer than 45 minutes to bake-- a little over 1 hour. It was a little long on time and work, but overall a very good cake (I keep "evening it out!").

Chocolate Chip Cake

Reviewed: May 12, 2009
After reading other reviews, I made some changes to this recipe. I decreased the amount of baking powder to 2 tsp and added a teaspoon of cinnamon to the dry ingredients. I baked it in a bundt pan, and buttered and cinnamon-sugared the pan instead of butter and flouring it. This posed a problem, as half the cake stuck & I was going to take a picture of it to put on here! I used Ghiradelli dark chocolate chips, chopped up-- it was delicious!

These were exceptional and kept well in the freezer. I made them 3 weeks ago, and pulled them out last night to find that they were still soft and sweet!
