English Muffin Bread

What a simple recipe that yielded a great loaf of bread. Followed it almost as written except that I only had 3 cups of bread flour and had to use regular flour for the remainder - came out perfect. So simple to make too. Thanks for a great recipe!

Savory Crab Stuffed Mushrooms

Made these with leftover crabmeat from steamed crabs we had and they were very good. Happened to be out of white wine and had to substitute chicken broth which worked out fine. Also the crabmeat I used had 'Old Bay Seasoning' on it because of how it was cooked, this actually perked up the recipe. I have tried other stuffed mushroom recipes on this site and this is the one we like the best.

Yummy Blueberry Cobbler

I followed the directions as written and thought that I was ruining it when I poured the boiling water over the dish, but was I ever wrong. It was excellent served warm with ice cream. My son actually woke me up that night to tell me how much he liked it. I will definitely make it again.

Shredded Brussels Sprouts

This is an excellent side dish for your Thanksgiving dinner. I have tried many other Brussel sprout recipes from this site and never have I had the compliments that this one garnered. As others recommended I quartered the sprouts rather than shredding. Next time I will take the time to shred which could only make the dish tastier. I did sub slivered almonds for pine nuts just for convenience and will probably cut back to 1/2 cup next time. This recipe will definitely will show up on our table again.

Awesome Sausage, Apple and Cranberry Stuffing

Great recipe. Cooked it outside the bird, if you do be sure to stir and check moisture at 30 minutes as others have suggested. Using sage pork sausage work well, otherwise made as directed.

Fresh Semolina and Egg Pasta

Have made this numerous times. As someone who had been making pasta by hand for decades, when I began using my Kitchenaid mixer it was like an epiphany. This is a great basic recipe that I just throw into my mixer. I do add a little more salt than a pinch. I still roll out the dough using a hand crank pasta machine. Another 'ah-ha' moment came when I saw a video of someone using a machine like mine. They put the dough through the rollers for the first pass and for the second pass after feeding the dough into the rollers they crimp the two ends together (to form a circle of dough)then continue to crank the dough through the machine. It creates something that looks like a fan belt going through the rollers, adjusting the thickness settings after each cycle through the machine. This cuts the rolling time by about 1/2 (no feeding it through each pass). It just shows that an old dog CAN learn new tricks.

Chicken Pot Pie IV

A great recipe for pot pie. With a little prep the night before, it was easy to assemble and cook after I came home from work the next day. Used turkey and the green beans that were leftover from Sunday dinner, microwaved some broccoli added cream of chicken and mushroom soup and followed the recipe. I did use Pillsbury pie crusts and it was given a thumbs up by all.

Slow-Cooker Chicken Tortilla Soup

This is one recipe that I have used for years and how I make it varies with what I have on the shelf. I substitute frozen chicken breasts, rotel (we like everything spicy so I use the hot variety), and a carton of low sodium chicken broth for some of the items listed and it always comes out great.

Italian Sausage Soup

I do not think that there is any way to mess up this soup. I made it on a Sunday for Monday night's dinner and it never made it past Sunday night. Then I made it again on Monday after I got home from work. The second time around I had to use what I had on hand which meant kidney beans, carrots, sweet red pepper, spicy diced tomato, corn, escarole, some leftover rice, etc (along with hot Italian sausage). And it was excellent. Do not add salt, it really does not need it. A little extra garlic and it really tastes great. Definitely a keeper.

Slow Cooker Turkey Breast

Definitely one of my top 10 recipes from this site. So easy. There is never a reason not to come home from work to a hot meal that continues to provide a basis for other meals during the rest of the week. The leftovers make sandwiches for lunch, or they go into salads for dinner and my favorite is turkey gumbo. I have been using this recipe for years and had to comment today after starting the slow cooker on a Sunday when I have guests coming for dinner and I am not feeling well. A no fuss dinner that everyone will enjoy.

Broiled Parmesan-Lemon Tilapia

The best received Parmesan Tilapia recipe on this site. Everyone ate it and I followed the recipe as best I could, using the regular Sazon and some Old Bay in place of the suggested seasoning. The lemon and lemon zest really give the fish a good flavor. Next time I may sprinkle some panko crumbs on top. It is a keeper.
