I do not think that there is any way to mess up this soup. I made it on a Sunday for Monday night's dinner and it never made it past Sunday night. Then I made it again on Monday after I got home from work. The second time around I had to use what I had on hand which meant kidney beans, carrots, sweet red pepper, spicy diced tomato, corn, escarole, some leftover rice, etc (along with hot Italian sausage).
And it was excellent. Do not add salt, it really does not need it. A little extra garlic and it really tastes great. Definitely a keeper.
