Turtles® Cheesecake

I haven't taken it out of the pan yet, but so far, this cake is lovely! I followed the suggestions of others and used caramel sauce, and did not melt the chocolate chips before stirring them in. This looks to be a very good basic cheesecake recipe.

Taco Seasoning

CORNSTARCH!!! That's what I've been missing. I refuse to use pre-packaged spice mixes as they are mostly salt. But the texture of my experiements has been so soupy. Thank you for this recipe :)

Insalata Caprese I

So simple, and yet fantastic. I reduced the balsamic, and like other reviewers, I served it at room temperature. My husband and I enjoyed it with NY strip steaks. I will absolutely prepare this again.

Strawberry Ice Cream

Penne with Shrimp

Fantastic, and super-quick. I used a can of tomatoes that was flavored with garlic and basil, and whole wheat penne. My husband is a really picky eater, but for this, he dove in for seconds. We both agree that the sauce could use a little something --perhaps a really general Italian seasoning--but I will absolutely make this again.

Basil Tomato Soup

5 stars all around. I used what I had in my pantry. I pureed a can of tomatos and used dried basil. I also added a bit of garlic powder and onion powder (I would have chopped the real thing and sauteed it but my husband prefers smooth tomato soup). I halved the recipe since it was dinner for 2, and I used 1T butter. I'll make it many, many times this Fall and Winter. It was perfect with grilled cheese!

Jay's Signature Pizza Crust

Excellent, excellent pizza crust. I was thinking about making a pizza tonight, and this seems to be a sign! I added some Italian seasoning to the dough for a little more flavor. I used a round Green Pan to bake it. ***I made it again tonight, cutting the water back to 1.25C. It is FAR less sticky and far easier to work with.

Fudge Puddles

I made these for my co-workers. They were gone before lunch. I also used a regular muffin tin and shot glass to make the wells. I did not wait until the end to fill all of the wells, and I had issues with the chocolate. I will absolutely make them again.

Pumpkin Whoopie Pies

Fantastic cookies. I brought them for my co-workers and they made me very popular. I, like other reviewers, used a 2T cookie scoop for uniform cookies, and Cream Cheese Frosting II from this site in place of the filling. I also added nutmeg to round out the pumpkin pie spices. I will absolutelym make them again.

Banana Oat Muffins

These muffins were very, very good. I made pretty much the same modifications that everyone else has made. They taste and look great, I just had a hard time peeling the muffin papers off. I'd recommend spraying the papers first.

Pad Thai

This was very good. Like other reviewers, I used peanut oil instead of butter and peanut butter. The grocery store closest to me doesn't carry fish sauce. I'll add it next time, but didn't really miss it. I also used brown sugar instead of white and cider vinegar since this is what I had.

Brown Sugar Meatloaf

Absolutely fantastic! I made this for the first time for guests, and there were rave reviews, and just enough left for me for a meatloaf sandwich for lunch. I, too, put the glaze on top, and I used 1 egg, Italian bread crumbs, 1/2 c milk. I think I could have uses a few more bread crumbs, but overall, a very good recipe. It will be made again.

Oatmeal Blueberry Muffins

Absolutely fabulous!!!!! I agree with another reviewer: This is the perfect muffin base. I didn't stray away from the blueberries, but I did ad 2 loose T of brownsugar, and dusted cinnamon in with the dry ingredients. I also added a splash of vanilla to the wet ingredients. I made 3 dozen for work, and they're already gone!

Asian Chicken Salad

I made this dish as a side for my family's Easter dinner. I doubled it, and still didn't have any leftover! I substituted 1T of olive oil for 1T of sesame oil for a bit richer flavor.

Very, very good! I used 3.25 C beef stock and 0.75 C red wine instead of the water/bullion combination. I, like many others, used extra cornstarch. I will absolutely make it again

Roasted Chicken with Risotto and Caramelized Onions

Fantastic!!!! I used some leftover chicken instead of a deli chicken, and tossed in some chopped broccoli for color. I also sauteed garlic with the onions. I will absolutely make it again!

Fluffy Pancakes

These are the best pancakes I've ever eaten. I shook a fairly liberal amount of cinnamon into the batter, and it was fantastic. I might try folding some chopped apples in next time.
