Cornish Game Hens with Garlic and Rosemary

What an absolutely wonderful sauce this made! And so simple and easy with just a handful of ingredients. Did not add anything (did use dried Rosemary in place of fresh) and it was absolutely wonderful. However, haven't made Cornish game hens in quite some time, and while they make an elegant presentation, I very much prefer the flavor of chicken. Will definitely try this recipe again with either a whole roast chicken or pieces, and will increase sauce ingredient quantities. Did not use any thickening agent; reducing down yielded a wonderfully tangy, rich garlicky sauce. The cloves of roasted garlic would be an additional treat spread on toasted bread; we just ate them along with everything else. If anyone has any suggestions for using this recipe with whole or cut-up chicken, please share! Wonderful side dish for this are the Twice Baked Sweet Potatoes, also found on this site.

Twice Baked Sweet Potatoes

These are wonderful! Did "test" for husband and self prior to doing for dinner party. Do like the inclusion of bit of lemon juice; cuts the sweetness. Only had granulated light brown sugar but I think maybe better; not overly sweet. Baked 2 potatoes on 425 for 1 hr; bit too soft; will try 400 next time. Did not use foil but did use small amount of olive oil; will omit oil on next try. Think baking in oven may yield better flavor than microwave; always oes w/regular baked potatoes. This dish a wonderful side dish with chicken. Thank you for this very tasty recipe!
