Hot Clam Dip II

Reviewed: Feb. 3, 2009
I am not sure if I didn't drain the clams enough, but the consistency was too watery. The taste was good though, will have to attempt a smaller amount and try something to thicken it.

Needs something else, it was lacking in flavor.

Bourbon Pecan Chicken

Reviewed: Jan. 29, 2009
There was much failure when I tried the original butter/bread crumb mixture. It came out to moist and didn't stick and I decided there was enough butter in the sauce. Hence only four stars. This was delicious after tweaking it a bit because the "breading mix and butter" didn't coat well. I just pounded the breasts, pat dry, dredged in flour, egg white wash, and in the breading mix (which I just used finely chopped/ground pecan and italian style bread crumb and no butter) and browned on each side in light butter and a bit of pam for 2-3 minutes a side. I finished the cooking at 375 for 20 mins in a shallow roasting pan. I doubled the sauce but used a half butter/half spread instead. Put a slight amount of sauce on each breast to serve. Didn't have scallions so I didn't bother... DELICIOUS.

To Die For Blueberry Muffins

Reviewed: Jan. 16, 2009
Its the best if you add vanilla extract, use brown sugar instead of white, and almond flavor if you need extra flavor.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Jan. 16, 2009
By far the very best wings. Use the chicken without the sauce for a base for other flavors...chipotle, honey-mustard, etc.

Ratatouille

Reviewed: Jan. 16, 2009
I don't feel this is a true "main" dish, but it was so good. Delicious. Tips: Precook peppers/zucchini, took over an hour to cook it to make them soft enough to enjoy.(unless you prefer them hard). It makes more like 6-8 servings.

Supreme Strawberry Topping

Reviewed: Jan. 16, 2009
Followed the directions other reviewers posted and turned out good, needs more strawberries for my personal tastes. Excellent start from which each person can add/subtract.

Creamy Pesto Shrimp

I really enjoyed this easy to make recipe. I just cut down on the butter and used half and half instead of heavy cream to make it less fatty.

Soft Chocolate Chip Cookies II

Reviewed: Oct. 29, 2008
Absolutely the best cookie, and yes its Nestle Toll House cookie recipe minus the salt (I believe) and add Vanilla instant pudding. But lets face it, the only reason to look for a different recipe in the first place is because you wanted a chewier cookie, and this is the answer...Yummy.

Baked Parmesan Perch

Reviewed: Oct. 14, 2008
This was overall a good and flavorful way to make baked fish. Usually you find baked fish to be lacking in taste when you don't use a ton of butter etc. Also works well with other fish like Flounder. Definitely use the lemon-pepper for extra flavor, or your favorite herbs...

Honeyed Pork Chops

Reviewed: Aug. 28, 2008
An excellent recipe. I followed the recipe exactly and the only negative of the dish is the pork chops were a bit dry/tough. Serve with plain rice and broccoli.

Chicken Tikka Masala

Reviewed: May 28, 2008
I followed everyone's advice and reduced the salt and cayenne/jal. I could only find non-fat plain yogurt (which is absolutely disgusting by itself), which may be the reason my husband thought it wasn't sweet enough?. I thought it was good, and just needs to be less spicy. Otherwise an excellent recipe.
