Chocolate Frosting I
My signature cake is usually devil's food with buttercream frosting so when my father-in-law requested chocolate frosting I needed a recipe. This is it!! I LOVE this chocolate frosting. It was quick and easy to make and it is delicious!! This will be my go-to chocolate frosting from now on. Also, I needed it to be lactose-free so I substituted Organic Smart Balance for butter and the results were fantastic. I also added 2 tsp vanilla just b/c I love the vanilla flavor. I did have to double the recipe (might need to triple it next time as it is so good!). Thanks for a delicious recipe!

Roast Sticky Chicken-Rotisserie Style
"This is the BEST chicken, Mom!" was the review I received from my family after making this recipe. For a 8lb chicken I doubled the recipe except for the salt (4 tsp Kosher salt) and the Cayenne pepper (3/4 tsp) - my kids don't like things too spicy. I started the cooking temp at 400 for the first 30 minutes then decreased the temp to 275 for the remaining 3 hours. I also basted after the temp change and every hour after that. I found that during cooking I had to add some chicken stock to the bottom of the pan to get enough drippings to make a lot of gravy - the gravy is fantastic! Just used a butter/flour base and whisked in the drippings. This chicken is the most tender and juicy I have ever made at home. At the request of my husband and kids, I have made this chicken four more times since my initial attempt. Thanks for a great recipe!!

Baked French Fries I
Delicious! Crunchy on the outside, soft on the inside and just the right mix of spices. I did decreased the heat to 400 degrees and the time to 40 minutes. I also added some sea salt. These are some of the best fries I have ever made at home! Thanks for a great recipe!
