Francisco's Blender Salsa

As it is, I would rate this recipe with four stars. But, I think with just a little modification it could easily be five! Like other reviewers, I found this to be too thick. I think in the future I will not drain any of the canned tomatoes and green chiles and this may help. Also, I think I'll not blend half the onion coarsely chopped and two cans of the tomatoes and chiles to leave it a little chunky. But the flavor is VERY good!

Thai Noodles with Chicken

Overall this recipe was good. I made some modifications like other reviewers had suggested - I increased the peanut butter from 2T to 3T, and I doubled the marinade and used the extra for sauce. I only had linguini noodles on hand, but they were very good with it. My biggest complaint is that it seemed too oily and the vinegar was quite strong. I think in the future I may decrease or eliminate the oil and cut the vinegar in half.

Best Chicken Pasta Salad

I LOVE this chicken salad recipe! I usually add just a touch of steak sauce to the ranch dressing (equaling the amount of dressing called for) to give it a little more "zip". I also don't worry too much if I'm missing the avocado on the day I make it, or sometimes I'll add another veggie in if I have it. I've added chopped green pepper which is really good. And I always add at least 1/2 cup of cubed cheese... mmm!

Sweet Onion Burgers

One onion is WAY too much for one pound of ground beef. I tried to mix it all in but still had about 1/4 cup in the mixing bowl that just wouldn't incorporate into the meat. I'd suggest adding half of an onion instead. I also added a couple tablespoons of my favorite steak sauce and felt like the burgers were OK but not terrific. With some tweaking this could be a good base for a burger, but "as is" it is inadequate.

Turkey Pot Pie I

This was a wonderful way to use the leftover dark meat from our Thanksgiving turkey! I only made a couple additions to this recipe. I added close to a cup of bias-cut sugar snap peas when sauteeing the veggies, and added only about the equivalent of one carrot because that is what I had. I also had leftover fat-free half & half, so I used that in place of the milk. After it was all combined, I added about 1/2 teaspoon of poultry seasoning and it was just about perfect. I did pre-bake the crust for about ten minutes, then let it cool before adding the slightly cooled filling and it turned out wonderfully.

Honey Of An Oatmeal Bread

I've made this bread several times now and it has been perfect each time! This last time was actually the closest I've come to making it as the recipe is written - the only change I made was to use melted butter instead of oil. In other batches, I have substituted 1/3 cup whole wheat flour instead of the bread flour and that also turns out very nicely. This one is a keeper for sure!
