Easy Granola Bars

I had about 3 cups of a fruit and nut "muesli" cereal that nobody liked. So I added another cup of oats, and then a blend of dried cranberries, chopped dates, pecans, chocolate chips and coconut to the bowl. Added the warmed sweetened condensed milk and a little vanilla. It went into a very greased 9x13 glass pan and was easily removed once it was cool. It is beyond delicious, and so easy. I planned to serve it for breakfast, but I doubt there will be any left in the morning! YUMMY!!!!!

Smashed Potatoes

My new favorite way to serve potatoes! I added extra balsamic vinegar and a different variety of herbs. I didn't have parchment paper, but greasing the baking sheet worked fine. They are delicious when still soft, too!

BBQ Chicken Tortilla Pizza

So much better on a tortilla than a dough-y crust! I added diced pepperocini for extra kick and used Famous Dave's Sweet & Zesty bbq sauce. I can't wait for lunch tomorrow!

Aw-some Coleslaw

Italian Sausage and Zucchini

Easy & my family loved it. The can of stewed tomatoes was bland, it needed more "zing", so I added a 15-oz can of Italian-style diced tomatoes. Next time, I will use 2 cans of Ital. diced tomatoes, and skip the stewed tomatoes. I also addded 8-oz of cooked rotini to the finished pot & it was a perfect all-in-one meal.

Country-Style Steak

Roasted Brussels Sprouts

Yes, it is delicious as writtten. However, I brought it to a friend's house and the smell in my car, her house, and my house when I returned home was overwhelming. I don't think I can do that to innocent bystanders again.

Bow Ties, Zucchini, Carrots, and Chicken

This was a hit at my house, but I made revisions based on other reviews. Boiled a 12-oz box of farfalle, drained & set aside. Used 3/4 cup white wine and 1 cup water with 1 chicken boullion cube. Added to the sauteed chicken & allowed it to simmer (covered) for 10 minutes. Sauteed zucchini chunks, sliced red onion, 1/2-lb boiled baby carrots, 8 oz of quartered mushrooms in butter and garlic. Scooped chicken out of the juice & added to the cooked vegetables. Mixed 1 Tspn flour with 1/2 cup sour cream, and blended into boiling chicken liquid, whisking until thickened. Blended the farfalle into the sauce, then added chicken & vegetables. Sprinkled with parmesean cheese. Yum!

Caper Baked Chicken

Used Kikkoman Steak Sauce, but thought it was too salty. However my family loved it, so maybe I will cut back on the caper liquid next time. Cooked it in a ceramic Bean Pot & chicken was moist.
