Apple Stuffed Chicken Breast

The chicken was hard to flip with the toothpicks in it. Needless to say, I made a huge mess, but the stuffing was delicious, and a great way to use up leftover things I had around the kitchen.

Grilled Apple and Swiss Cheese Sandwich

Why didn't I think of this before?! Apples and cheese go great together. I used a tart granny smith and some bitter Brie, so the tartness and savoriness balanced perfectly. I've also used St. Andre cheese, which was even better.

Spinach-Stuffed Pumpkins

This was interesting. The thing I like most about it is the way it looks. I also like that it makes use of a leftover pumpkin shell, because I was able to bake the seeds and puree the innards for other recipes. The spinach is good but nothing special. This is all about the presentation, which is why I would make this again for my parents or guests.

Cheesecake Cookie Cups

Too easy! These are tasty, but probably the most unhealthy thing I've made in a while. If you are using reusable silicone baking cups, make sure you remove the cheesecakes right after they harden. Otherwise they taste like plastic.

Alaska Salmon Bake with Pecan Crunch Coating

This recipe has a really great mix of flavors. I followed the recipe exactly as it said and it worked out perfectly. I love the salty-sweet, crunchy-soft, salmon, honey, mustard, and pecan combination.

Peppermint Meringues

These are perfect! Easy, simple, and well-liked. I used a plastic bag to make hershey kiss-sized meringues. Warning: These meringues are very addictive.

Southwest Chicken

Mine didn't look like the picture either. I wasn't sure if the chicken was getting done or not so I chopped it into bite-size pieces, turning it into a sort-of stew. All the chicken and veggies had the same sort of brown-ish tinge to them, but the flavor was pretty good. Easy to make and even my picky family liked it, so that's a plus.

Mango Salsa Chicken

The salsa doesn't need half a red onion. It masks the flavor of the mango and peppers. Next time I'm going to try leaving the onion out altogether because it was so strong. The chicken was simple and tasted great.

Watermelon and Strawberry Lemonade

I love the flavor. However, my blender is old and dull and I got a bunch of watermelon pulp floating at the top. Below it, though, was liquid gold! I also used frozen, sweetened strawberries and less than half the sugar the recipe called for.

Connie's Zucchini "Crab" Cakes

WOW. That's about all I can say. We followed the recipe exactly as it said and they came out PERFECT. Pretty easy, too--we just threw the veggies in a chopper and mixed everything into one big bowl--how easy is that? Anyway, these are a great veggie alternative to crab cakes, had an absolutely yummy texture to them, and were great on toasted wheat buns.

Cheesy Potato and Corn Chowder

We love this recipe. It comes out so thick and delicious. At first, the mixture came out runny, but I think that's because we didn't measure something right. But following the recipe exactly as it says makes a delicious and easy chowder.

Chow Mein Noodle Cookie

These are embarassingly easy to make, but anywhere you take them, people devour them and ask for the recipe. Cleaning up is the only difficult thing. It stuck to my pot pretty badly.

Anaheim Fish Tacos

All of the flavors are great. We really loved the lime. But we didn't really know what to do with all the leftover juice. It should be drained before putting the fish into tortillas, because it made mine a big mushy mess. Maybe next time we won't use so much liquid.

Linda's Lasagna

This is the first lasagna I ever made and my mom, sister, boyfriend, and friends all loved it. I used skim milk ricotta instead of cottage cheese but otherwise followed the recipe exactly and it was completely devoured in a matter of minutes.

Homemade Black Bean Veggie Burgers

We love this recipe. We're not vegetarian, either. We just like simple, cheap, and tasty food. I followed the recipe for baking exactly and they turned out great. We even melted some spicy cheese on top.
