Herbed Rice and Spicy Black Bean Salad

Very tasty. This would make a great potluck dish. I've made this several times now. Each time a little different depending what I have on hand. The best substitutes so far are balsamic vinegar, brown jasmin rice, and garlic cloves instead of garlic powder.

Southwestern Bean and Rice Salad

Very tasty. I've made it a few times now. Once using kidney beans & twice using black beans. The black beans won, plus the extra red chili pepper flakes are great for those who like it spicy. :)

Corned Beef Potato Dinner

This was tasty. A great way to use up corn beef leftovers. I made it with the mustard, but next time would like to try the horseradish. The kids weren't overly impressed with it, but ate it nonetheless.

Cheddar Cabbage Casserole

I'm not very fond of cooked cabbage, but this recipe is delicious! Kids & husband loved it too! It's a keeper! :-D

Irish Soda Bread

Very tasty! It is loaded with rasins! Although, I loved it, my husband & kids were a bit overwhelmed. Next time I make it, I will only add 1/2 of the rasins.
