Vanilla Crepes

Y-U-M-M-Y! I love this recipe. It is so easy to make. Definately a crowd pleaser. I got lots of oooh's and aaah's. I used the recipe portions as listed. I did add 3 whole eggs as others recommended. Also, added a little more milk to thin out. I added a little at a time to desired consistency. For me - it was kind of like a medium/heavy cream consistency. Everything else the same. It was a little lumpy but did not affect the outcome at all. I used a 9" skillet over medium heat. About every three I would spray with PAM. I poured a small amount in pan then moved around so that mix would spread all along the bottom. I would wait until ends would curl up a little. Turning them with a spatula was very awkward for me. Since the pan had PAM - I was able to pick the edge up with my finger and actually turn it over with my hands. Almost like a super thin tortilla. Very fast and easy. For the filling someone recommended a very simple receipe - I doubled it and this is what it was 8 oz cream cheese, 1 cup confectioners sugar & 2 teaspoons of vanilla. I actually popped the cream cheese in the microwave for about 1 minute. Then added the sugar and vanilla. I also added a little heavy cream to make it easier to stir. It was a little thicker than cake frosting. It was very easy to put the filling on the crepe. For the top - I cut about 1 1/2 lbs of fresh strawberries. Nat and Darcy's Amazing Eggplant Lasagna

I've never made eggplant lasagna before. I made this along with a regular lasagne since I was feeding Meat eaters and Veg's. I have to say I did not have very much of this -just a taste. It was decent. It was very easy to prepare. The veg's raved about it and really enjoyed it. It was all gone so I guess it was pretty good!

Grilled Fish Steaks

I made this for a group of 15. It came out excellent. Also very easy. I had to make this more affordable so I used Tilapia. I put them directly on the grill and turned the fillets very carefully. Worked out well. Everyone loved the flavor. I made it with "Marinated Barbequed Vegetables SUBMITTED BY: Stackhawkley". The recipes are very similar so the veggies were a great compliment to the fish. I also served it with Wild Rice. Perfect for a nice outdoor summer meal. I prepared and marinated while the kids were in school. By the time we were ready to eat, everything went smoothly, easy and fast. All the kids loved it too!

Marinated Barbequed Vegetables

This was very, very good. I'd never grilled veggies. It was very easy, I had red, green & yellow peppers, asparagus, yellow squash, zucchini and eggplant. The eggplant was sweated out for 10 minutes before adding in the marinade. I put everything in a ziplock bag and added the eggplant for only about 10 minutes. I would periodically turn the bag so all the veggies were coated throughly. Everyone loved them even the kids. Very easy and good. A little lemony but I like that flavor.

Yum, Yum! This was very good. This is on the expensive side though. I had to make this on a budget. I had to use an inexpensive wine but wish I used a better quality. My fault. I used all the seafood except my store was out of bay scallops - So I had to buy the big ones and cut them each into 4 pieces. This came out very good. It is a very pretty dish, with a nice presentation. Everyone loved it. The only thing I would do differently next time is select a better wine. It's true what they say don't cook with a wine you wouldn't drink.

Chicken Florentine Casserole

I've never made nor had Chicken Florentine before this recipe. My roommates gave up rice, bread, pasta & red meat for Lent. Since it was my turn to cook - I came across this recipe. I followed the recipe exactly. It was just perfect. Everyone in our house loved it, adults and kids alike. I made a double batch so we did have some left overs. The next day it was used with omlettes and those were excellent too. I have made this again, and everyone was very happy. Since there are lots of us, I actually cut the chicken up in cubes this time and this worked out better. This is very good - thank you for sharing!

Soft Oatmeal Cookies

This recipe is a keeper! My 15 year old loved them. They were very good and soft - I did add a cup of raisins they were EXCELLENT- thank you for the recipe March 2011 - my son is now 18 years old and off to the Navy. His one request for his Care Package are these cookies - we all love them!!!

Filipino Lumpia

This recipe is very good. I read all the reviews ahead of time. So I ommitted the salt as suggested. I put in cabbage, shredded carrots and used more pork than beef. It was very good and I will use the recipe again except I would even use more cabbage and carrots. Thank you - great recipe

Easy Meatloaf

This meatloaf is the BEST! I've already made it a few times. It is on the sweet side but that's what makes it great. EXCELLENT for meatloaf sandwiches. The topping seems to keep all of the juices inside. IT'S GREAT !!! AAA+++

Herman Reunion Cheese Ball

I made this for a family gathering. Everyone loved it including the kids. It was GREAT! A couple of days later people were still talking about how good it was. Downside, It was very difficult to make. I guess because I used the blender. The cream cheese although softened was too thick and nothing would move around. So- I did it a little at a time but it was worth it.

Mozzarella Dip

This receipe is a great way to have kids and adults eat their vegetables. I made this for a family gathering. Everyone loved it. I served with broccoli, cauliflower, carrots and celery. EXTREMELY EASY TO MAKE - will make again!

Seafood Stuffed Mushrooms

Recently I was incharge of making the appetizers for a family gathering. From the time I walked in the door with the tray, to when I set them on the table - these were half gone. They were EXCELLENT. When I first read the receipe - I thought they have to be put in the oven - I couldn't think of them any other way. BUT NO - These are GREAT just follow the receipe. I'm making them tonight again and will be through spring and summer. THEY ARE PERFECT - and extremely easy to make. I too had my son help make them. He is looking forward to helping tonight. EXCELLENT!
