Pork Chops O'Brien

I made this last night and we all really enjoyed it. The only reason I didn't give it 5 stars is that the potato mixture had too much liquid in it. Next time I will omit the milk. The only thing I changed was using McCormick's Applewood Rub on the chops. I also used more onions and cheese because 1/2 cup of each wasn't enough to cover the 9x13" dish. I will definitely make it again.

Slow Cooker Latin Chicken

I made this for supper tonight and even my picky husband loved it. I went by the reviews and added more liquid - 1-1/2 cups salsa and 2 cups chicken broth. Since we don't like dark meat, I used skinless, boneless chicken breasts. Another change was using a can of jalapinto beans instead of black beans since my husband doesn't care for black beans and I added a can of MexiCorn. When I stirred it after I got home from work, the chicken shredded itself so it was like a thick chicken stew. I served it over brown rice. I will definitely be making it again.

Easy Peach Cobbler

This is the way my mom made peach cobbler and it is a comfort food to me. She added a tsp. of vanilla extract to the batter and always served it warm with vanilla ice cream. YUM!!! I bought some spiced peached the other day and plan to make this cobbler with them. I'll let you know how it turns out.

One - Two - Three - Mexican Macaroni Salad

This is a keeper!!! I made the salad just a little while ago to go with the tamales we're having for supper. It was delicious even before the flavors had a chance to meld. I used tri-color spiral pasta and added black beans, Mexi-corn, cilantro, chives and a can of mild green chilies. I used Pace medium salsa. I omitted the black olives because husband and son don't like them. I'm thinking next time I might add some cooked chicken to make it an entire meal.

Asparagus Side Dish

Excellent recipe! I made it for Easter and there wasn't a bite left. The only change I made was to add a splash of white balsamic vinegar with the olive oil. I will definitely be making it again.

Jezebel Sauce

I would like to give this 5 stars but I made it exactly as written and took a taste. It about blew the top of my head off, and believe me, I like hot & spicy foods. I added more pineapple preserves and apple jelly to make it edible. I plan to serve it with our Easter ham tomorrow and am looking forward to serving it atop a block of cream chese later.

Cola Cake

I love this recipe and have experimented with different flavors of cake mix and diet soda. Spice cake with diet orange soda is my favorite. For those who say it doesn't rise enough but still want to cut fat and calories, add two egg whites rather than whole eggs.

Golden Yam Brownies

OMG! What a delicious recipe! Based on reviews, I added 1-1/2 tsp. cinnamon and about a cup of chopped pecans. I also reduced the sugars to 3/4 cup each (I subbed brown sugar/Splenda blend for the brown sugar). I had to bake it for 40 minutes. I omitted the glaze because it's plenty sweet without it. This has the texture of cake rather than brownies but regardless, I will definitely make it again and again.

Chicken Spaghetti II

This is an excellent recipe and so easy! It is actually so easy that I was skeptical but wanted something that could be made quickly after work. We all really enjoyed it, including my really picky DH. I didn't change a thing except I used Mexican Velveeta and hot Ro-tel since we like spicy foods. I highly recommend it.

Salmon Macaroni Bake

I made this a couple of days ago and although my DH & DS were skeptical, they loved it! DS ate exactly half of the 9x13" casserole. I did make a couple of changes to suit our taste. First, I used a family-size pan of Stouffer's mac & cheese that I nuked for 18 minutes. Since DH won't eat mushrooms, I used cream of chicken with herbs soup. Instead of the milk, I added a can of Ro-Tel tomatoes. I also used more onions than called for. Also, for this size dish, I used 3 6-oz. cans of salmon. I topped it with panko bread crumbs and no more cheese - it was cheesy enough. It will definitely become a staple in our house.

Slow Cooker Tamale Pie

This is very good. I did tweak it a little since we like things spicy. First, I doubled the recipe since I have a large oval slow cooker. I added some sauteed diced onions and bell peppers plus some chopped jalapenos (from a can) to the meat mixture. I also added jalapenos to the cornbread mixture. Also, 2/3 cups of milk for 2 packages of corn bread mix was not enough so I just kept adding until it looked like the right consistency. Finally, because the topping didn't brown in the slow cooker, I removed the crock and put it in the oven on "broil" for a couple of minutes. I will definitely make this again.

Baked Dijon Salmon

I made this for dinner tonight and it was excellent! I didn't change a thing except I used panko bread crumbs and I coated the fillets all around with the wet and dry ingredients. I also ground the pecans for a couple of seconds in the blender for finer crumbs but the flavor still came through. It would make quite an impressive dish for guests. I served it with baked potatoes, green salad and French bread.

Slow Cooker Chicken Taco Soup

I made this Sat. and we loved it! The only change I made was to use chicken broth rather than beer and I used more than 12 oz. to make it more like soup than stew. Also used one can of original Ro-Tel and one can of extra hot since we love spicy foods. I had leftover baked chicken so I shredded it and added it at the very beginning. I also added a little cilantro. The only side dish was a big pan of Mexican cornbread. This is definitely a keeper.
