Pizza Swirls

Reviewed: Feb. 23, 2009
This is a very tasty recipe. I actually overstuffed mine so I baked mine un-cut and cut them once they were baked. My 6 year old enjoyed both making them and eating them!

Chicken Makhani (Indian Butter Chicken)

Reviewed: Jan. 28, 2014
Delicious! I had a serious craving for butter chicken, and this recipe satisfied it! I did a little testing with the sauce to see what tasted best to thicken it... ground cashews all the way!I also added the fenugreek seeds recommended by one reviewer. I can't say with any certainty whether or not they made the recipe any better, but I went to the bulk store to buy a small amount, and once I smelled them, I immediately thought of authentic Indian cuisine. I'm going to assume that these must have improved things. That being said, I rated this recipe a 4 star, as written. With the ground cashews and fenugreek, it was 5 star deliciousness!

Chipotle Crusted Pork Tenderloin

Reviewed: Jan. 25, 2013
Pretty good. I thought it needed a bit more acidity, but my family thought it was great as is. Maybe some citrus or something in the marinade. I marinaded this overnight in pineapple juice as suggested by some reviewers, but didn't find that much of the flavor came through. I think this would be nice served together with grilled pineapple, though. I will try that next time. *note* I'm also thinking that 'chipotle chili powder' is different from brand to brand/ place to place. I have some that I purchased from Bulk Barn, and while it has a bit of kick, it's not what I would call 'spicy'. I read some reviews claiming this was super spicy, and some that claimed that it wasn't spicy in the least. My advice... taste your chipotle chili powder. I don't think that they are all made equally.

Excellent and Healthy Cornbread

Reviewed: Jan. 25, 2013
Great for what it is! If you're excepting the cornbread that is filled with butter, this is very different. As a low fat recipe, it is a very tasty 4 star cornbread. I baked in a 9x9 pyrex glass dish and lined with parchment. This is my first time trying out a low fat cornbread, and I was VERY skeptical as I am known for my butter and cheese laden cornbread. As I expected, this was a very low fat tasting recipe, but with the addition of more flavour it could me much more amazing. This time I added about 1 cup of frozen corn niblets, but next time I think I might also add some finely diced onion, jalepeno, garlic, and more spices/herbs. I will make this again.

Creamy Dill Cucumber Toasties

Reviewed: Jan. 25, 2013
Delicious. I used fresh dill rather than dried, and added the Italian seasoning to taste. I wound up using about 1/2 of it. I HIGHLY recommend using this to taste, as this is your salt component and people have very different tastes for saltiness. Had I used the whole package, I think it would have been far too much for me. I served these at a baby shower and everyone seemed to enjoy them. I put some cheese mixture on slices on baguette, then a slice of English cucumber, then a small sprig of fresh dill... GREAT presentation. I had leftover cream cheese mixture, and it tastes lovely on crackers or on bagels, too. Anywhere that a savory cream cheese goes, this works.

Royal Icing II

Reviewed: Dec. 29, 2012
Great recipe! I've used this recipe several times, all with much success. Please keep in mind that a wide variety of factors will affect how much liquid is needed (and if you used any extracts to flavor it... I like a tad of lemon... this counts as part of your liquid). It is best to add the liquid a little at a time so that you can stop if you reach the desired consistency with less liquid, and keep going if you need more. The last time I made this (for xmas cookies) I needed about 9 tbsp!

Five Ingredient Ice Cream

Reviewed: Jan. 8, 2012
Perfect and easy vanilla base to which you can add anything you want! I love adding candied pecans or almonds, Skor bits and toasted coconut. You could add cocoa or any flavored extract to change the base flavor, aswell. What a wonderful and versatile recipe! I've done this both with and without a machine. Without a machine I found it froze up a tad bit icy (texture was a bit off) but in the machine it was smooth and creamy. I've also made this using light cream to cut calories and noticed no textural difference when made in the machine, however, it didn't quite turn out when I tied it without the machine. Either way, it always tastes great!

Sweet Potato Bread I

Reviewed: Apr. 3, 2009
I absolutely loved this bread! I was searching for an alternative to the banana bread I make very often and I'm sure I've found another bread I like just as much. My boyfriend said that he has co-workers who'd pay me to make it for them and even my 6 year old loved it! First off, I've tried this recipe 3 ways: 0nce as written which was very tasty. One time using applesauce in place of the oil which was slightly 'odd' tasting and I didn't like the texture. Lastly I used 1/2 sweet potato and 1/2 mashed fresh pumpkin and it was INCREDIBLE! Next up I'm going to try a lower fat version with sour cream instead.

Broiled Tilapia Parmesan

Reviewed: Jan. 25, 2009
Excellent flavor, but WAY too much fat!!! I recommend significantly cutting down on the fatty ingredients because the topping is VERY greasy. I'll try this recipe again for the wonderful flavor, but I'll hack out most of the fat.

White Chocolate Raspberry Cheesecake

Reviewed: Oct. 13, 2008
Excellent cheesecake that pleased everyone I served it to! I followed some of the suggestions made by other reviewers... for the crust I used 2 rows of whole oreos, 1/4 c. butter and omitted the sugar... double wrapped pan in tin foil and cooked in water bath to prevent cracking. I made the raspberry sauce and though I haven't tried it with preserves I think that it really added alot to the overall taste. The tartness of the sauce really compliments the sweetness of the cake. Delicious! TIP: I saw that many people had difficulty straining the seeds from the raspberry sauce, so I used a the foot from a pair of new panty hose to strain the seeds!

Fresh Pea Soup

Reviewed: Jan. 28, 2014
Delicious, refreshing and healthy! I subbed chicken stock for water and added a dash of rosemary. Very easy soup. To save on calories, I didn't add cream, though I didn't find that it tasted like it was missing anything. Recommended!

Actually Delicious Turkey Burgers

Delicious! I used whole eggs. 5 stars only because I needed more flavour, but with some added spices these were great and held up well to the BBQ. I'll definitely make these again.

Jay's Signature Pizza Crust

Reviewed: Nov. 12, 2012
My family has enjoyed this dough time and time again. Recipe is good for either thick or thin pizzas. Just roll it or stretch it out to your liking. We have also used this recipe to make calzones and panzos and it works just right... same oven temp, but I usually add around 10 minutes to the time, give or take. The reason I give 4 stars instead of 5 is the lack of flavor. I've added garlic powder, onion powder, fresh garlic, rosemary, or combinations of the above. With none of these things added, it is a little bland. As long as you season the dough, it's great. This is our go to recipe!

White Almond Wedding Cake

Reviewed: Oct. 17, 2012
Excellent cake for stacking or carving. Holds up well if using fondant. I've done this as written, and also with chocolate cake mix and both were great! Feel free to change this up with other cake mix flavors and other extracts (as long as you are using basic mixes, and not, say, angel food or something).

Spooky Witches' Fingers

They do need a little more flavor but these are GREAT cookies! I suggest adding a little extra vanilla and almond extract. Not too sweet and very nice texture. These are going to become an addition to my annual Halloween baking, for sure.

Pineapple Upside-Down Cake VII

Reviewed: Sep. 13, 2011
I tried the recipe as written and really liked it, but I went with several reviewer suggestions and this cake was an absolute hit! I added the liquid from the pineapple in lieu of water for the cake mix along with 1/2 tsp of cinnamon (adds a wonderful layer of flavor). Also, I used cherries and pineapple rings to create a nice pattern on top, then filled all of the spaces with crushed pineapple. VERY wonderful flavor, incredibly simple to make, and beautiful presentation for guests.
