Cream Cheese Frosting II

Excellent recipe. Rich, tangy, sweet... Mmmm. I love cream cheese icing, and this one is great. For Piping READ THIS! Use all room temperature ingredients and make as directed, but add and extra cup of confectioners sugar. Yes, it does make it sweeter, but it is the only way this will stand up to piping. Depending on climate, humidity, and many other factors, you may need more/less sugar. Once it's whipped, the icing should hold a medium-firm peak. Use Philadelphia cream cheese, and do not use light... full fat regular is the only way to go. Pipe it chilled ( I chilled mine for a few hours). It will still be softer than, say, a buttercream, but your piping will hold. Once I piped this on cupcakes and let them sit for a few hours in a pretty warm house full of people, it held. You could go ahead and use it as written and pipe it cold, but it may fall as it warms up... what's the point in going to the effort of piping gorgeous swirls only to have them fall? Before I added the extra sugar, it was a bit soft for piping, IMO.

Creamy Dill Cucumber Toasties

Delicious. I used fresh dill rather than dried, and added the Italian seasoning to taste. I wound up using about 1/2 of it. I HIGHLY recommend using this to taste, as this is your salt component and people have very different tastes for saltiness. Had I used the whole package, I think it would have been far too much for me. I served these at a baby shower and everyone seemed to enjoy them. I put some cheese mixture on slices on baguette, then a slice of English cucumber, then a small sprig of fresh dill... GREAT presentation. I had leftover cream cheese mixture, and it tastes lovely on crackers or on bagels, too. Anywhere that a savory cream cheese goes, this works.

Hot Artichoke and Spinach Dip II

I liked this, but I found it a bit too salty and a tad too rich. That being said, I still ate it and enjoyed it, but I couldn't eat much of it before it got to be a bit too much for me. For those who like a thick and rich dip, this is for you. I prefer creamier dip that is a bit less rich. I guess it's just a preference.

Peanut Butter Balls III

I did enjoy these, however, many people that I served them to did not. Following other reviews, I cut the sugar back to about 1 1/2 cups and they were still sickly sweet. Adding all that sugar to already sweet peanut butter and covering it in sweet chocolate. I even thinned the chocolate so I could have a thinner coating. The next time I make these, I will scale the sugar back even further. These certainly have potential to be 5 stars, but the amount of sugar in this recipe is WAY off. I couldn't imagine what it would have been like with the full 4 cups.

Chewy Coconut Cookies

Amazing! Made these for a little something different to add to my holiday cookie tray, and I am so glad I did. These were an absolute hit! Of everything I made (7 types of cookies) these were the first to go at 2 separate events!

Royal Icing II

Great recipe! I've used this recipe several times, all with much success. Please keep in mind that a wide variety of factors will affect how much liquid is needed (and if you used any extracts to flavor it... I like a tad of lemon... this counts as part of your liquid). It is best to add the liquid a little at a time so that you can stop if you reach the desired consistency with less liquid, and keep going if you need more. The last time I made this (for xmas cookies) I needed about 9 tbsp!

Peppermint Meringues

Delicious! I made this exactly as written and it was fantastic. The 2nd batch I added 1/2 tsp of peppermint extract and it was even better! I tried them with a light drizzle of chocolate on top and I didn't care for it as much (though I love the combo of choc/mint). If you enjoy traditional meringues, this is a great twist!

Gingerbread Men

Excellent cookies! If you are looking for a gingerbread recipe that simply doesn't use molasses but tastes just like gingerbread, then don't try this recipe. Like many other reviewers said, this is like gingerbread for people who don't like gingerbread. My son, who hates gingerbread, gobbled them up! We also made a gingerbread house with this yesterday and it turned out wonderfully. The pieces for the house had to be baked for longer than stated, and the gingerbread men and trees had to be baked for less time. Just keep an eye on them and you will not be disappointed. This is a keeper for us. It's now going to be a part of our regular holiday baking. Thanks, Kim!

Jay's Signature Pizza Crust

My family has enjoyed this dough time and time again. Recipe is good for either thick or thin pizzas. Just roll it or stretch it out to your liking. We have also used this recipe to make calzones and panzos and it works just right... same oven temp, but I usually add around 10 minutes to the time, give or take. The reason I give 4 stars instead of 5 is the lack of flavor. I've added garlic powder, onion powder, fresh garlic, rosemary, or combinations of the above. With none of these things added, it is a little bland. As long as you season the dough, it's great. This is our go to recipe!

Easy Chocolate Ice Cream

OK... the flavor was ok. I used cocoa instead of syrop to cut back on the sweetness and I found it just sweet enough. I noticed many people commenting on how it was too sweet. I'd like to add that my BF found it slightly under sweetened with the cocoa. I'd suggest playing around with the amount of syrop/cocoa to control the sweetness to your liking. I added a tsp of both cinnamon and cayenne to turn it into a nice mexican chocolate which was very nice, but tasting it before adding those ingredients was nice and chocolately. The thing I didn't like about this dessert was the texture. It's too foamy. You don't get that nice cold mouth feel that should come with ice cream. Like when you eat cold and creamy frozen spoonful and you can feel it slowly melt to a liquid in your mouth. It's more like a frozen whipped cream, for sure. It melts back to whipped cream, aswell. So, flavour was good, but the texture was 2 stars.

Easy Homemade Vanilla Ice Cream

I only gave 4 stars because it tends to get a little icy and crumbly the longer it is in the freezer. That is the only thing holding this back from being 5 star. The first day is definitely the best. This is a good base recipe to add whatever you want. Play with extracts, too, if you want a different flavor altogether. Very easy, versatile, and tasty.

Oatmeal Raisin Cookies IV

Made as written, except added some shredded coconut for more flavour, and substituted toasted almonds for pecans since that was what I had on hand. I REALLY wanted to love this recipe, but the cookies were little more cakey than I like. Flavour was wonderful, though.

White Almond Wedding Cake

Excellent cake for stacking or carving. Holds up well if using fondant. I've done this as written, and also with chocolate cake mix and both were great! Feel free to change this up with other cake mix flavors and other extracts (as long as you are using basic mixes, and not, say, angel food or something).

Slow-Cooker Pepper Steak

Not sure it was a flaw in the recipe so much as it just wasn't to my taste. The flavours just didn't combine very well to me and I found it was too salty. The peppers would have been better had they been added little later in the cooking process because they seemed to get a bit mushy.

Pork Chalupas

Simple and delicious meal that my whole family enjoys eating. As written it is wonderful. The only thing I add is a chopped onion, but it is great without it, aswell. I also reduce salt. Just a personal preference. I usually double the recipe, and freeze whatever is left into freezer bags for dinner when I don't have much time. To serve from frozen, I just sit the freezer bag in warm water until thawed then pour into a pot and reheat on the stove (though I'm sure it could be done in a covered dish in the microwave, aswell). Great recipe for make ahead meals!

Sugar Cookie Icing

This icing turns out SO beautifully! The more milk you add, I find, the less glossy, so try to keep cling wrap on them when you are not using them. I usually make a few colours and keep them all covered, uncovering them only as I use them, the re covering them as I move through the colours. I also found that liquid food coloring can make it a tad runny depending on how rich of a colour you are trying to achieve. If you are going for deep, rich hues... go with gel food colouring so you don't water down your icing. They are SUPER concentrated.

Five Ingredient Ice Cream

Perfect and easy vanilla base to which you can add anything you want! I love adding candied pecans or almonds, Skor bits and toasted coconut. You could add cocoa or any flavored extract to change the base flavor, aswell. What a wonderful and versatile recipe! I've done this both with and without a machine. Without a machine I found it froze up a tad bit icy (texture was a bit off) but in the machine it was smooth and creamy. I've also made this using light cream to cut calories and noticed no textural difference when made in the machine, however, it didn't quite turn out when I tied it without the machine. Either way, it always tastes great!
