Fresh Pea Soup

Delicious, refreshing and healthy! I subbed chicken stock for water and added a dash of rosemary. Very easy soup. To save on calories, I didn't add cream, though I didn't find that it tasted like it was missing anything. Recommended!

Unbelievable Rolls

These were good for a quick roll. They were best when they were warm from the over, but but lost something when they cooled. Serve these fresh and warm, if possible.

Braised Balsamic Chicken

VERY very tasty, however, I didn't use a great quality balsamic. Rating the result of what I made, I'd say it was a 3 1/2 - 4 star, but can likely blame that on the balsamic that I used. I m going to invest in a better vinegar and try this again.

Chicken Makhani (Indian Butter Chicken)

Delicious! I had a serious craving for butter chicken, and this recipe satisfied it! I did a little testing with the sauce to see what tasted best to thicken it... ground cashews all the way!I also added the fenugreek seeds recommended by one reviewer. I can't say with any certainty whether or not they made the recipe any better, but I went to the bulk store to buy a small amount, and once I smelled them, I immediately thought of authentic Indian cuisine. I'm going to assume that these must have improved things. That being said, I rated this recipe a 4 star, as written. With the ground cashews and fenugreek, it was 5 star deliciousness!

Seven Layer Tex Mex Dip

As written, it was really good. A definite crowd pleaser. I made this with homemade salsa in place of the tomatoes and added my own taco seasoning to fat free sour cream, and left out the mayo. Even better. 5 stars!

Butternut Squash Soup II

How easy! I cooked this in my rice cooker!! This recipe was incredible! I love butternut squash soup, but this is my new favourite. I cut the squash, removed the seeds, rubbed it with olive oil, then roasted it in the oven first for more flavour and to make peeling it easier. I highly recommend this step! My only complaint is that I found that the potato added a bit of graininess to the otherwise velvety texture of this soup. I'm thinking that it may be because I used russet potatoes? I'm thinking that I should have maybe used Yukon or new potatoes? I'll have to play with that a bit. I finished the soup with a hand blender and a dollop of sour cream (low fat). The soup tastes great without it, but it is even better with it. I also tried it with a touch of cinnamon and curry and preferred the flavour with those spices, rather than without... but to each their own. Try this soup! You won't be let down.

Oil-Free Apple Herb Salad Dressing

Not terrible, but pretty boring. I could see this working better for grain salads, or bean salad... not green salads. I saw that one reviewer added mustard and honey. That would probably be a good improvement. My salad needed more! I'm always looking cut cut back on or omit oil in recipes. I really wanted to love this.

Actually Delicious Turkey Burgers

Delicious! I used whole eggs. 5 stars only because I needed more flavour, but with some added spices these were great and held up well to the BBQ. I'll definitely make these again.

Burger or Hot Dog Buns

These were very tasty. A bit dense, but still tasty. I would make them again. We used these for homemade turkey burgers. With the leftovers, we just warmed them in the microwave and ate them with our meals for the next few days.

Quick Yeast Rolls

Excellent quick rolls! I'm going to try adding some extra flavours and spices next time. They don't taste as good the next day so it's better to eat them fresh from the oven, if possible.

Low-Fat Apple Spice Muffins

I enjoyed this very much. The only thing stopping me from giving 5 stars is that I didn't care for the spices much. The rating is for a low fat recipe. Next time I will eliminate the allspice and double the cinnamon.

Banana Banana Bread

Very nice banana bread. As others have said, do not over stir or your bread will be very dense! Stir just until mixed. I baked in mini loaf pan (doubled recipe for 4 mini loaves, and baked about 10 minutes less at same temp. Sprinkled tops with cinnamon and sugar.

Amazing. No complaints. Easy to work with, colors nicely with gel colors. Paint vodka over top of it once in place and you will get a nice shine.

AWESOME!!! The whole family loved this recipe, and we will put this into our regular side dish rotation. I used chicken stock instead of vegetable and didn't use cilatro (we didn't have any) but otherwise as written.

Chipotle Crusted Pork Tenderloin

Pretty good. I thought it needed a bit more acidity, but my family thought it was great as is. Maybe some citrus or something in the marinade. I marinaded this overnight in pineapple juice as suggested by some reviewers, but didn't find that much of the flavor came through. I think this would be nice served together with grilled pineapple, though. I will try that next time. *note* I'm also thinking that 'chipotle chili powder' is different from brand to brand/ place to place. I have some that I purchased from Bulk Barn, and while it has a bit of kick, it's not what I would call 'spicy'. I read some reviews claiming this was super spicy, and some that claimed that it wasn't spicy in the least. My advice... taste your chipotle chili powder. I don't think that they are all made equally.

Grilled Tilapia with Mango Salsa

My family and I really enjoyed this. The only complaint that I have is that the fish itself was a little bland. I will definitely make this again, but with a little more flavour to the marinade and fish. The salsa was great. This was a nice, healthy, fresh dish.

Excellent and Healthy Cornbread

Great for what it is! If you're excepting the cornbread that is filled with butter, this is very different. As a low fat recipe, it is a very tasty 4 star cornbread. I baked in a 9x9 pyrex glass dish and lined with parchment. This is my first time trying out a low fat cornbread, and I was VERY skeptical as I am known for my butter and cheese laden cornbread. As I expected, this was a very low fat tasting recipe, but with the addition of more flavour it could me much more amazing. This time I added about 1 cup of frozen corn niblets, but next time I think I might also add some finely diced onion, jalepeno, garlic, and more spices/herbs. I will make this again.
