Lemon Garlic Tilapia

this is great - did not change - added paprika -used small stone sheet - baked 1 piece for 20 mins - great alternative to favorite mustard crusted tilipia

Eggplant with Mushroom Stuffing

did not stuff - peeled skin off and made casserole of it - would add some tomatoes next time - use panko plain and small amount of italian panko - also added some balsamic vinegar

Tarragon Lover's Scallops

This was awesome - I made it following 1 serving - hard to guess on lemon zest - added too much - did not wipe out pan - cooked 4 scallops - used dried tarragon leaves - would like to try with fresh to compare - 9 pts WW

I took some advise and did not use flour - as on WW thought better choice - want to try with fresh parsley - not sure if needed. - wished I had white wine on hand to make sauce - will definitely make again

Mustard Crusted Tilapia

I am always looking for different recipes for tilapia and this one is winner. Found it easy to follow 2 serving recipe but using it for serving of 1 as I was doubling paste mixture as suggested by several people - did add small amount of olive oil to make spread thinner - also used panko crumbs instead of bread crumbs and thought it was great. Split out red membrane as suggested which left two different size pieces - cooking at different times. Removed smaller piece after adding spread and baking for 5 mins - then put bigger piece under broiler as suggested for 3 mins - came out perfect. As a WW meal - 4 points

Baked Garlic Parmesan Chicken

This is very easy recipe, made 2 servings, used a little more garlic - only put some of crumbs on top and will not add next time as too dry, and for Weight Watcher - is 5 points and worth every poiny
