Fruit Salsa with Cinnamon Tortilla Chips

Phenominal! We baked the chips rather than frying them and they came out great (but don't expect to pull Tostidos out of the oven)

Spicy Lamb Patties

Out of this world! I took the suggestion of another reviewer and added some paprika for color, but otherwise used the spices that were recommended. Since we haven't gotten the grill fired up yet, I made them into meatballs, sauteed them for a couple of minutes until they were brown on all sides and then baked them in a covered container for 10 minutes at 375. They came out FANTASTIC! The yogurt sauce is a great way to serve them - I also put out a side dish of couscous with fresh mint leaves.

Quick Gnocchi

Don't be turned off by the instant potatoes! Although they could never pass as real mashed potatoes, this definitely qualifies as real gnocchi. Great base for adding seasonings that compliment your meal.

Chuck's Favorite Mac and Cheese

I never want to make any other mac and cheese! Once I got over the fact that I could still see the curds from the cottage cheese (don't just expect them to go away like I did!) this was an amazing dish.

Parsnip Chips

Like some other reviewers, I used olive oil and baked them. I also put on chili powder and they had a great kick! The chili goes great with the sweetness of the parsnips.

Wine Sauce Chicken

This recipe is to die for. I made the breasts whole and served over wild rice with a side of green beans. Like another reviewer, I didn't feel the need to cook the chicken before it went in the oven, so I just browned it in the same pan as the mushrooms to seal in the juices. It came out tender and definitely cooked after 45 minutes.

Garlic-Lemon Double Stuffed Chicken

Great! Served with garlic & herb rice pilaf and steamed fiddleheads - I made a lot of extra sauce for the fiddleheads and it came out great.

Grandma's Polish Perogies

Pierogies are my very favorite, but I'd never taken the initative to make them myself. They came out GREAT! I changed the filling a bit - added two cups of colby jack cheese, omitted the processed stuff, and added about 8 strips of bacon and some caramelized onions. There was a ton of filling left over - which was okay by me, since the filling is pretty much just the most delicious mashed potatoes ever.

Penne with Spicy Vodka Tomato Cream Sauce

YUM! I added way more sausage and instead of a large can of diced tomatoes, threw a small can in the blender with a can of tomato paste and tomatoes from our garden. I also used an entire bunch of parsley which gave the dish some real color. Topped with fresh grated Argentinian parmesan - perfecto.

Zucchini Alfredo

Even my boyfriend, who would eat only hamburgers if he had his way, loved this meat-free dish. Since my food processor is on the fritz, I peeled zucchini and summer squash for this dish - the slivers were perfect. I also threw in about half a package of sliced shittake mushrooms at the same time and they gave the dish some girth. I sliced up a entire bunch of basil to put in and it really came out great!

Sopapilla Cheesecake

The perfect compliment to any mexican or spanish dinner. To make it easy on myself, I microwaved the cream cheese for 30 seconds before whipping it with the vanilla and sugar - that made it go way easier and there was more than enough to cover the crust. This is a fool-proof, sure to please recipe - I highly recommend it!

The sauce is great, even though it made me nervous to put cream over high heat, it came out fine! The colors in this dish make it an entirely impressive vegetarian meal.
