Coconut Shrimp I

Very good! I found that a medium high heat is best for frying - the highest setting on my stove burnt the coconut right away.

Scallops Mascarpone

This was so delicious - we used shittake mushrooms and they ended up being the best part of the dish. Like other reviewers we found that there was no way the scallops were going to fit in the same pan with the veggies so we cooked them separately with no consequences.

Pork Tenderloin with Mustard Sauce

This recipe was great! The mustard sauce required more mustard powder to give it a kick, but add slowly to taste. I served with sweet potato and yukon gold fries from scratch - a big hit!!

So delicious! I added some vanilla and used an assortment of jams and jellies - the jams work much better. The best one that I used was probably blackberry - SO GOOD!

Great recipe! One important word of advice that probably should have been in the original recipe - let the cookies cool on the pan!! The chocolate gets very melty and it will run all over your cookies if you try to move them before they are completely cooled.

GREAT recipe. Followed it to the letter the first time - except followed the advice about 25 minutes rather than 40. It was done in 25. In the future, I probably wouldn't let it rise so long - I like dense challah. I would probably also add more honey. We dipped it in honey this time to fix that problem. Great bread!

The Best Rolled Sugar Cookies

This is really a great recipe - I've made these cookies twice now and here are some tips I've learned: -the parchment paper really does help a lot! it makes the cookies light brown on the bottom but never burnt, eliminates the need for butter, and makes washing the pan really easy. -the cookies were too sweet for me as well, so instead of frosting them I sprinkled some decorator's colored sugar on them BEFORE putting them in the oven - that way they are decorated but not too sweet! On the other hand, my boyfriend and his friends insist that they are much better frosted. -These cookies will get hard really fast if you don't store them properly - don't leave them out on a plate for your family to enjoy, put them in a tupperware container and seal them. They will stay soft for a long time if you do it that way. Also, bring copies of the recipe! People love it and you will get tons of thank-you's if you make these for someone!

Chicken Quesadillas and Fiesta Rice

It was good, but not great. I agree that there seems to be something missing in the Quesadillas - maybe a layer of refried beans would make them better? My grocery store doesn't carry canned Cheddar soup so instead we used shredded cheese and some milk - still came out great (maybe better?) We also added about half a cup of cheese to the rice and used real rice rather than instant - works the same. To add heat, use Cabot's Mexican Blend shredded cheese - I'm not really one for heat so we used the classic Fancy Blend.
