Jamaican Beef Patties

The end result was fabulous, but like many other reviewers suggested, the proportions of filling to dough is totally out of whack. Since I was only making these for my boyfriend and I, I halved the ingredients for the filling and kept the amounts for the dough the same. I still had a ton of leftover filling, but there was enough dough to make 5 meal-sized patties. I added more curry than was recommended and also added chili powder and paprika. I took another reviewer's suggestion and made the dough in the food processor - made it super easy, the whole meal was done within an hour. Thank you for the recipe!

Chicken With Mushrooms

SO delicious! Like other reviewers, I used cream of mushroom soup and sauteed the mushrooms with some garlic before adding them to the casserole. I used shittake mushrooms and they came out great. I served with white rice that I had cooked with chicken stock instead of water. To die for!

Awesome Slow Cooker Pot Roast

So delicious! I took the advice of some reviewers and found that browning the meat is essential and also that veggies shouldn't be added until about an hour before you plan on eating, so that the gravy has time to get some personality.

Pork Tenderloin with Pineapple Salsa

GREAT recipe. I changed the salsa a bit - I added mangoes and kiwis but chickened out of the jalapeno (my boyfriend and I are wimps about spicy food!). The red pepper was enough to offset the sweetness and make the salsa a great pair for the tenderloin.

Scallops Mascarpone

This was so delicious - we used shittake mushrooms and they ended up being the best part of the dish. Like other reviewers we found that there was no way the scallops were going to fit in the same pan with the veggies so we cooked them separately with no consequences.

Pork Tenderloin with Mustard Sauce

This recipe was great! The mustard sauce required more mustard powder to give it a kick, but add slowly to taste. I served with sweet potato and yukon gold fries from scratch - a big hit!!

Great recipe! One important word of advice that probably should have been in the original recipe - let the cookies cool on the pan!! The chocolate gets very melty and it will run all over your cookies if you try to move them before they are completely cooled.
