Mom's Zucchini Bread

Very good! The only thing I changed was that I substituted a cup of chocolate chips for the cup of nuts. I made it in one bundt pan instead of in loaf pans. It stuck to the bottom of the pan a little, but it was still delicious!

David's Yellow Cake

This is a great yellow cake recipe! Just make sure you beat the butter and sugar so that they are nice and fluffy before you add the egg yolks (one at a time). Mine came out fluffy, buttery-tasting, and delicious!

Empire State Muffins

These may be the best muffins I have ever eaten!I reduced the sugar to one cup, and I used 1/4 cup vegetable oil and 1/4 cup unsweetened applesauce. I also substituted whole wheat flour for some of the all-purpose flour. Soooo delicious!

Sand Art Brownies

I tried making these before giving them as a gift, and I used 1/2 cup of oil, 2 eggs, and 2 T of water. I think that it could be cut down to 1/3 cup, because they were a bit oily. I baked them about 28 minutes and they looked done, but they came out very gooey and I had to throw away some of the brownies in the middle of the pan since they weren't fully cooked. But, the feedback on the cooked ones was wonderful! Great recipe. And the jar was beautiful when put together. I used m&ms instead of the nuts.

Tiramisu II

WONDERFUL! However, I used about 1 1/2 to 2 cups of strong coffee, mixed with about 6 tablespoons of Kahlua and 4 tablespoons of rum. I don't know how 1/4 cup of coffee could ever be enough! I dunked the ladyfingers in the liquid rather than drizzling it on top, and this made for the perfect consistency and flavor of the ladyfingers. Don't be afraid to do this--they are supposed to be soaked and a bit mushy. I brought this to work and was told this is better than the Olive Garden's tiramisu.

Creamy Vanilla Ice Cream

Delicious!!! I used vanilla bean paste instead of extract, so there were black vanilla bean specks throughout the ice cream. Letting the ice cream chill in the refrigerator overnight before freezing in the ice cream maker really improves the flavor. Thanks for the awesome recipe!

Rice with Summer Squash

Spicy Garlic Lime Chicken

When I added the lime juice and garlic to the pan, it did not smell very good, so I was afraid to try the chicken. But, it came out very well. I couldn't really taste the garlic or lime, but the flavor of the chicken was delicious. And, still good the next day.

Chocolate Chip Cake

I made this last week because company was coming over, and it is FANTASTIC. So delicious, moist, and chocolately without being overpowering. Here is what you should do to make it fabulous: -Use yellow cake mix with pudding in the mix, plus the box of instant vanilla pudding. -Stir cake mix, pudding mix, and mini chocolate chips together in large bowl. Then add the eggs, oil, and milk and stir until blended. -Grate 2/3 of a bar of German Sweet baking chocolate and mix this into the batter. (I didn't sprinkle any on the finished cake). The chips and grated chocolate won't sink if you follow the above directions. Dust with some powdered sugar once the cake is cooled. This is one of the best cake recipes I have ever used!!! DELICIOUS.

Spiced Pecan Shortbread

This shortbread is delicious, and it smells like Christmas while it bakes. I toasted some blanched almonds and used them instead of pecans. Wonderful recipe!

Good Old Fashioned Pancakes

These looked good, but didn't have a whole lot of flavor. I added some vanilla and a little extra sugar, but that seemed to just give a hint of a pastry flavor to the pancakes. It is missing something, but I can't figure out what.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I added about a half cup of unsweetened applesauce to the batter, which kept the cake nice and moist. This helped the texture so that it wasn't very crumbly and it held together well.

Luscious Buttercream Frosting

I love this frosting. If you are having problems with clumps in the frosting, it might be helpful to sift the powdered sugar before adding it to the mixture. I used yellow cake and made cupcakes and frosted them with this buttercream frosting, and it was awesome.
