My favorite things to cook
I'm a big follower of the Mediterranean diet, lots of fish, tons of fresh produce, olive oil and vinegars, and plenty of herbs and spices! I am just now starting to incorporate some Asian influences and love to expiriment with all their wonderful sauces and marinades.

Firecracker Grilled Alaska Salmon
Absolutely the best salmon I have ever eaten in my life! I followed the recipe to a T, no changes just instead of grilling I baked it in the oven on 400 for 20 minutes. Perfection!!!!

Beer Margaritas
I made these for a pool party this past weekend - EXCELLENT! I was very skeptical when I read the recipe and saw it had beer in it (which I love beer) but the thought of mixing all that together sounded awful. After reading all the rave reviews I decided to give it a try anyway and I'm glad I did! I did substitute 7up for the water and used white tequila and Corona Light. I think next time I might put a little more 7up or some water in it as the limeade was a teeny bit to strong for me.

Jagerschnitzel
My mother is German and I lived there for most of my life so I know a good jagerschnitzel when I try one. This recipe was great! I made a few little changes. Instead of using the beef bouillon and diced onion I substited a packet of onion soup mix. I also added a little extra sour cream and cornstarch to the juices just because I tend to like my gravy a little thicker. Excellent, my Oma would be proud :)
