pitas after being placed between wet dishtowels
About this Cook
Running a food blog at ChocolatePrawns.com. Father of an almost-2-year-old. I take cake decorating and cooking classes.
My favorite things to cook
I like any recipe that requires weeks of planning and a trip to my favorite cooking store for new hardware. I really like fussy, time-consuming recipes. I dream of one day making Heston Blumenthal's Black Forest Cake (requires a vacuum chamber).
My favorite family cooking traditions
My dad used to make the most delicious leg of lamb on the rotisserie. I haven't been able to duplicate it yet.
My cooking triumphs
My wife and I made ground lamb pitas once that were just 100% perfectly seasoned and sauced. We didn't write down the recipe and haven't been able to duplicate it since.
My cooking tragedies
Gnocchi eludes me.

Fudgy Brownies II
Very chocolatey and fudgey! You MUST take them out while a toothpick test still shows batter! If you wait until the toothpick is dry or almost dry, as for cake, they will be rock hard. I took a cup of coffee, boiled it until it was reduced to about 2-3tbsp and added it to the batter. This added an extra layer of flavor that I really liked. I think I'd also add a pinch of salt and don't forget the vanilla.

Basic Pasta
Beautiful! Like the other commenters, I added about 1/2 tbsp olive oil and I let the dough rest, covered for a 1/2 hour before putting through the machine. It kept jamming/stalling in the machine, so I rubbed some water on my hands, then onto the dough and kneaded it for a minute. Then it worked perfectly.

Banana Muffins II
I only had 2 bananas, so I added 1/4 cup of squash puree (we roast butternut squash, puree it and freeze it in individual lumps, then bag it once it's frozen) and a pinch of nutmeg. My wife/son's playgroup ate all but 3 muffins (made 24 mini-muffins). Wonderful recipe!
