Salsa Chicken Rice Casserole

This was really good. I only made minor changes, so I believe my review is fair. I had to use two cans of cream of chicken (didn't have mushroom on hand), I used brown rice that I had on hand, and I added a can of black beans in withe the coked rice. I only made one layer of each because they weren't covering enough of the 9x13 baking dish. So I put the rice & beans on the bottom of the dish, covered it with the soup/salsa mixture, then put the cooked chicken over that, and covered the whole thing with the cheeses. It turned out great, and the thick layer of cheese on top was fantastic! YUM!

Ratatouille

This was delicious! I left out the cheese because I don't do dairy, and didn't have parsley (which offers little flavor anyhow) so I used some fresh basil. I also forgot to throw in the tomatoes (which I was planning on adding after the rest cooked so they wouldn't be super mushy). Even so, this was really tasty! Did not miss the parmesan at all, nor the tomatoes. We ate this over a bed of cauliflower rice, and were supremely satisfied. I will be making this regularly!

Downeast Maine Pumpkin Bread

This is by far the BEST pumpkin bread I have ever made or tasted! My six year old son would rather have this than pumpkin pie, and I have taken to making these loaves by the dozens each year around the holidays. They get even better when wrapped for a day or two. I have made this as written, and it's good, but I modified ONE ingredient and have made it this way ever since. Instead of oil, I substitute one cup of Musselman's Extra Chunky applesauce. This cuts the fat to next to nothing, and the bread comes out moist and tender every time. Everyone loves "my" pumpkin bread! All that is left is crumbs (and even those are hard to come by!)

Baked Dijon Salmon

YUM! As I am sitting here savoring this delicious dish, I thought I ought to review it. The honey mustard sauce is fantastic with the salmon, especially with the nutty topping. I didn't have any pecans, so I substituted walnuts. Also I didn't brush the fillets with the sauce, I just poured it all into the baking dish with the salmon, then sprinkled the nut mixture on top. MMMMMmmmmmm, it's sooo good!

Curried Chicken 'N' Broccoli

Ok I just made this the way that Adam M suggested-- and it is WONDERFUL!!! But as far as the original recipe goes, I gave it a 4 because I had to change it up so much to be so good. But really, I know I should try it the way it's written before I review it, so I will do that next time around. Adam M should submit his recipe to the site to be published. It is just amazing, everyone should try it!

Creamy Rice Pudding

This is absolutely delicious! I used skim milk and added just a little cinnamon and vanilla. Yum, I just finished making this pudding and I'm sitting here eating it right now, it's just so good. My son loves it too, he's three and a half. Thanks for a great recipe! Oh, I also added a tsp of Fibersure to my serving, for some extra nutrition. Couldn't taste the difference at all.

Sugar Cookie Icing

I found this icing extremely hard to work with. Very stiff, would not pipe onto cookies very well, and definitely too hard for my three year old son to help with. Maybe I did something wrong? Not sure. Sorry.

Banana Oatmeal Cookies

I made these cookies for Christmas this year. When I baked them, they seemed a bit on the dry side, but still pretty good. I made them about a month before Christmas and put them in the freezer in ziploc bags. When I was putting together my gift baskets, I pulled them out and decided to whip up a frosting to top them and make them a little better. Well, they turned out GREAT!!! I used Banana Butter Icing by Carol, from this site.

Banana Butter Icing

This frosting made my Banana Oatmeal cookies out of this world. When I made the cookies (also from this site, recipe by Yvonne Miller) they seemed a bit on the dry side, but tasty, so I thought icing would perk them up a bit. I'm glad I did, they were fantastic, thanks to this icing!

Roasted Brussels Sprouts

I love brussels sprouts, but these just didn't do it for me. I was so excited to try this recipe because of all of the rave reviews, but was sadly disappointed. They were just okay. A little bitter as well.

Fry Bread Tacos II

This fry bread is absolutely awesome!!! I made this for my boyfriend and my brother and sister-in-law and five kids aged two through fifteen and everyone loved it! I would suggest serving the bread with all of your favorite taco toppings, not just what is called for. One note though, my fry bread didn't stay in the cup like shape, they all just puffed up into mini loaves when fried. Still delicious though!!

Wisconsin Cheese Soup II

Yum yum yum! I added red bell peppers to the veggies when boiling in the first step. Everything else the same, except my family loves black pepper so I added more than called for. It turned out fabulous! My mom is still asking me to make it again and again!! Mmmmm Mmmmm Good!!!

Easy Pesto

This was a very quick and easy recipe. I did toast my almonds stove top. Next time I would at least double the amount of garlic to add more flavor; I thought it was just a tad bland. Also the addition of some parmesan cheese would help a lot! But all in all, it was good as is.

Krissy's Easy Chocolate Triple Layer Pie

With all of the rave reviews, I was expecting something a little more unique in flavor. But it's essentially just pudding. I used crushed oreos to make the crust, put it in a springform pan, then after the first pudding layer I put whole oreos around the edge, then finished the layers. Topped with mini chocolate chips instead of shavings. After removing the ring from the pan, the pie looked beautiful. So presentation was great, taste was just average. Still yummy though, if you like chocolate pudding!

Basil Tomato Soup

This soup is fantastic!! I doubled the recipe for Thanksgiving and there was so much soup! I did make one change, which was only to puree the soup after cooking for a smoother, creamier texture. It was delicious! My three year old son also enjoyed it over spaghetti noodles. Fabulous!

Easy Broccoli Quiche

Quiche itself could have had slightly more flavor, but was a nice comfort food. And the cheese layered over the crust was amazing; great melt in your mouth texture.
