I am a mom, a student, and a musician. I love to cook for my family and friends, and I am always looking for ways to make our favorites healthier. I've had IBS since I was about ten or so, and finally came to the realization that in order to live with it comfortably, I had to make some major changes to my diet. That meant cutting out all the fried, greasy foods, coffee, most red meat and dairy. I still am able to enjoy those things every once in awhile, but only in very small quantities. Which is okay with me - and my waistline!
My favorite things to cook
I love making Mexican dishes as this is one of my favorite kinds of food to eat! I am also always looking for ways to make any dish healthier and lighter while still tasting fabulous. I absolutely love fresh veggies and fruits, fresh salsas and salads are wonderful.
My cooking triumphs
I think the coolest thing I've ever made was a three dimensional Thomas the Tank Engine birthday cake for my son's third birthday. My best girlfriend and I stayed up until about 4am the night before the party making it. I think all told it took about 16 hours to make. He will be four here in a few moths, so I've gotta come up with something to top it!
My cooking tragedies
I was once making spinach artichoke dip (which I've since perfected) and the recipe called for 8 cloves of garlic. For some reason I interpreted it as 8 heads of garlic! The dip came out tasting absolutely wonderful (I LOVE garlic!!) but I smelled of garlic for a couple weeks afterward... I didn't realize my mistake until my boyfriend came over and was sitting next to me on the sofa and said, "Uh... Have you been eating garlic?" I was mortified! And of course will never live it down!

Salsa Chicken Rice Casserole
This was really good. I only made minor changes, so I believe my review is fair. I had to use two cans of cream of chicken (didn't have mushroom on hand), I used brown rice that I had on hand, and I added a can of black beans in withe the coked rice. I only made one layer of each because they weren't covering enough of the 9x13 baking dish. So I put the rice & beans on the bottom of the dish, covered it with the soup/salsa mixture, then put the cooked chicken over that, and covered the whole thing with the cheeses. It turned out great, and the thick layer of cheese on top was fantastic! YUM!

This was delicious! I left out the cheese because I don't do dairy, and didn't have parsley (which offers little flavor anyhow) so I used some fresh basil. I also forgot to throw in the tomatoes (which I was planning on adding after the rest cooked so they wouldn't be super mushy). Even so, this was really tasty! Did not miss the parmesan at all, nor the tomatoes. We ate this over a bed of cauliflower rice, and were supremely satisfied. I will be making this regularly!

Downeast Maine Pumpkin Bread
This is by far the BEST pumpkin bread I have ever made or tasted! My six year old son would rather have this than pumpkin pie, and I have taken to making these loaves by the dozens each year around the holidays. They get even better when wrapped for a day or two. I have made this as written, and it's good, but I modified ONE ingredient and have made it this way ever since. Instead of oil, I substitute one cup of Musselman's Extra Chunky applesauce. This cuts the fat to next to nothing, and the bread comes out moist and tender every time. Everyone loves "my" pumpkin bread! All that is left is crumbs (and even those are hard to come by!)
